Party Panache, Bacon Parmesan Bites

This is recipe is an oldie but a goodie
it’s been around for decades…
baked bacon crackers

This is a seriously easy appetizer
that will please kids and adults alike~
A popular version is made with brown sugar,
but I used Parmesan cheese instead

Club crackers are laid out on wire racks on a baking sheet

The crackers are topped with finely grated Parmesan cheese
Then put a piece of bacon
the length of the cracker
on top of the cheese
The bacon I used was wider than the cracker
so I folded it over itself for a double bacon layer

Most of the bacon cracker recipes call for
wrapping a piece of bacon around the cracker,
but it’s much easier to lay it on top
I added another layer of Parmesan cheese
to weigh it down and hold it in place

Okay so here’s where the magic happens…
into a 250 degree oven it goes for 2 hours
It slowly bakes into perfection!

Clean up is a breeze, just toss the parchment
and put the racks in the dishwasher

These make a perfect party appetizer
because they are low maintenance~
they’re wonderful at room temperature,
they can safely sit out for several hours,
you can pile them in a bowl or arrange them on a tray…
and you can make them earlier in the day

Bacon Parmesan Bites
Equipment
- wire baking racks
Ingredients
- Buttery crackers such as Club Crackers Waverly Wafers or Ritz
- Bacon strips
- Finely grated Parmesan cheese
Instructions
- Line a rimmed baking sheet with parchment paper and place a wire rack or racks on top
- Lay crackers out on top of wire racks.
- Put about 1 tsp of Parmesan on each cracker
- Cut bacon into pieces the length of your crackers. If itās too wide, fold it in half so it sits on top of the cracker.
- Add another tsp of Parmesan on top
- Bake at 250 degrees for 1 1/2 hours and check. Continue cooking until crackers are golden and bacon is cooked through, approximately 2 hours total. Cooking time depends on your oven and the type of bacon used.
- Make plenty, they disappear quickly!

We’re doing all appetizers for our first Cork Poppers in a year and a half. We’re hosting so I wanted something that I could make ahead of time (even a few hours is OK) and this might fit the bill. I could prep up the ingredients so it’s just a matter of assembling and popping them in the oven. I will be mining this site for more things to offer, too!

Super easy and tasty = fantastic. One question, does the bacon stick to the cracker? I see the crackers piled into a bowl.
Yes, the bacon holds in place by the melted cheese, this is a great appetizer to whip up with what you usually have on hand

I havenāt made these in ages, but when I do, everyone always loves them. My recipe calls for saltines rather than club crackers, with the Parmesan cheese sprinkled after the bacon. Either way, these are addictive.
I thought I’d have a ton leftover but not a one was left!
I enjoyed reading the variations. They feature bacon, for heaven’s sake. I can’t imagine any way of preparing them that wouldn’t be delicious. Thanks for sharing the recipe. It may be an old one, but I have never sampled it.
