Take-out Tuesday, Cucumber Blueberry Crunch Salad

This refreshing and light salad is perfect for hot summer days~

It’s simple to make and is topped with buttery almonds for crunch

and a tangy sweet homemade vinaigrette for flavor

Crisp romaine, green onions, cucumber slices

and fresh summer blueberries are combined for the salad

Saute almonds in butter and brown sugar to caramelize

and then sprinkle with Kosher salt

to add a sweet and salty crunch to the salad

The dressing literally takes minutes to make,

olive oil, apple cider vinegar, Dijon mustard, maple syrup,

salt & pepper~

I like to make it ahead of time for flavors to blend

There’s usually a jar of it in my fridge, it’s good on everything!

Cut up the cucumber, green onions, and romaine

and toss in cleaned blueberries

Right before serving toss the salad with the dressing

and top with buttery almonds

A no sweat summer salad!
