Take-out Tuesday, Cake Mix Peanut Butter Cup Cookie Bars

We celebrated the last weekend before school starts

with lots of swimming, boating and grilling at the beach house

I made these easy cake mix cookie bars for a sweet treat

These come together quickly and bake in 25 minutes

Peanut butter, white or yellow cake mix, sweetened condensed milk,

cooking oil, Reese’s Peanut Butter Cups*,

1 egg, and chocolate and butterscotch chips

*you can also use the mini Reese’s Peanut Butter Cups

Mix the cake mix with egg, peanut butter and oil

Put the dough into a 9″ x 13″ baking dish

that has been greased and lined with parchment paper

The dough is crumbly, use your fingers to spread it into and even layer

Cut the large peanut butter cups into 1/4ths

and put them on top along with the other chips

Next pour the milk over all

Into a 350 degree oven it goes for 25 minutes

Here comes the hard part,

waiting until it is cool enough to cut and eat!

Sit the dish on a wire rack and after the cookies cool,

put the dish in the refrigerator to set completely

Remove cookies from pan by lifting the paper out of the pan

and then cut into bars

Cake Mix Peanut Butter Cup Cookie Bars

Easy to make sweet peanut butter and chocolate treat!

Cook Time 25 minutes
Chill 2 hours

Equipment

  • 9" x 13" baking dish
  • parchment paper

Ingredients
  

  • 1 box white or yellow cake mix
  • 14 oz sweetened condensed milk
  • 1/2 cup peanut butter
  • 10 large peanut butter cups, cut into 1/4s or 2 cups mini peanut butter cups
  • 1/2 cup butterscotch chips
  • 1/2 cup chocolate chips
  • 1 large egg
  • 1/4 cup canola, vegetable or coconut oil

Instructions
 

  • combine cake mix with egg, oil and peanut butter in a stand mixer
  • Spray or grease and 9" x 13" baking dish. Line dish with parchment paper, and grease parchment paper
  • Transfer dough to dish, patting it into an even layer on top of the parchment paper
  • Top dough with candy and chips
  • Pour milk over all
  • Bake at 350 degrees for 25 minutes until golden and set
  • Place dish on a wire rack and let cool. When dish is cool, place in the refrigerator to finish setting for 1-2 hours
  • Remove cookies by lifting paper out of pan. Cut into bars or squares
  • Keep cookies in a covered container.
