Recipe Box, Apple, Pear, & Walnut Galette

Galettes are one of my go to favorites

This one is perfect for September and thoughts of Fall

Yummmmmy caramelized onions …

A tasty base for freshly sliced apples and pears

You can make a fancy arrangement or just toss them on

I did a combo of slices and chopped apples

Now comes the good part, walnuts and gorgonzola!
If you’re not bleu cheese lover, sub sharp cheddar

Now fold in the edges

Brush the dough with an egg wash
so it bakes up pretty and golden

Serve as an appetizer, side dish or main dish

You can add cooked sausage, bacon, or ham
to make it even heartier if desired

Perfect for these early Fall days

It’s loaded with flavor!


APPLE, PEAR and WALNUT GORGONZOLA GALETTE
Ingredients
- 1 refrigerated pie crust dough circle
- 1 apple
- 1 ripe pear
- 1 large vidalia or sweet onion
- 1-2 oz walnuts chopped
- 2-3 oz crumbled Gorgonzola cheese* or bleu cheese
- 2 T butter divided
- 1 T olive oil
- 1 egg
Instructions
- Peel and cut onion into 1/4″ slices.
- Place in skillet with 1 T butter and olive oil and cook over medium low until caramelized, stirring occasionally, about 25 minutes.
- Place pie crust circle on a silpat or piece of parchment paper on a baking sheet.
- Distribute onions evenly on crust leaving a 2 inch border around the edge.
- Wash fruit and cut into fairly thin slices and place on top of onions.
- Sprinkle with walnuts and cheese.
- Cut 1 T butter into tiny pieces and dot fruit mixture.
- Fold up edges by starting with a 3 inch edge, turning and pleating dough as you go around, forming the edge of the galette.
- Beat the egg and brush over the galette’s edge.
- Bake at 400 for 20 minutes or until galette looks done and pie crust is golden. Let sit for 5-10 minutes before cutting. Serves 4-6

I’ve never made a galette before — this one might be my first. It looks fabulous and I could see appetizer, snack or maybe even dessert potential with this one.
Galettes are so easy Jeanie, you’ve got to try making one! You can toss in anything you want, a great way to clean out the fridge!
