Recipe Box, Slow Cooker Bacon Cheeseburger Soup

Here we are, 5 days until Christmas,
and if you are short on time,
this soup can really be a life saver!

This soup is easy to make, family friendly, and comfort in a bowl!

Hamburger meat, frozen hash browns, chicken broth
cheese, bacon and seasonings…

All you have to do is brown the meat in a skillet, drain
and add into your slow cooker along with the rest of the ingredients

Give it a stir

Cover, set on low and let cook for 8 hours

To serve, garnish soup with bacon,
shredded cheese and chopped green onions

Serve with a garlic roll or bread for dunking 😋


Slow Cooker Bacon Cheeseburger Soup
Equipment
- 6 quart slow cooker
Ingredients
- 1 lb ground beef
- 16 oz. Velveeta cheese
- 1 bag 32 oz. frozen shredded hash brown potatoes
- 4 cups chicken broth
- 2 tsp Worcestershire sauce
- 1 tsp garlic powder
- pepper to taste
- 1 Tbsp onion powder
- 6-8 strips bacon, cooked
- 1 cup grated white cheddar, divided
- 2-3 green onions, chopped
Instructions
- Brown beef in skillet and drain well
- Put broth into a prepared slow cooker and add seasonings and stir.
- Add cooked beef, potatoes, Velvetta, bacon and grated cheddar, reserving some grated cheese and bacon for garnishing
- Stir to combine, then cover and set cooker to low for 8 hours
- Garnish soup with bacon, grated cheese, and green onions to serve.
