Recipe Box, Air Fryer Rosemary Red Potato Wedges

We have been playing with our new air fryer with much success!

I must mention that there are many different types

and brands of air fryers so cooking times and results can vary

Ours is a 10 QT Power XL Vortex Air Fryer Pro

{I bought it at Bed Bath and Beyond using a 20% off coupon}

Not only can you use it to air fry,

it has a rotisserie,

and it can broil, bake, roast, reheat and dehydrate

It can be used in a variety of ways

and has shelves instead of a basket

HHjr decided to use it for our favorite go to potato recipe

Colby’s Everything Potatoes

Cut red potatoes into small wedges and toss with olive oil,

chopped rosemary, and salt and pepper

Put them in a single layer on a rack in the air fryer

or in the air fryer basket

Set the air fryer to 400 degrees and set the timer for 20 minutes

They began to turn golden right before our very eyes!

After about 16 minutes they were done!

Note: time will vary depending on your air fryer

and size of potatoes,

so watch and check near the end of cooking time

Golden and crispy on the outside

and tender on the inside, perfect potatoes!

If you don’t have an air fryer,

you can roast these tasty potatoes in the oven

at 400 degrees for 40-45 minutes

Air Fryer Rosemary Potato Wedges

Crispy on the outside and soft on the inside, these easy to make rosemary seasoned potato wedges are irresistible and go well with just about anything
Prep Time 10 minutes
Cook Time 20 minutes
Course Side Dish

Equipment

  • air fryer*

Ingredients
  

  • 12 petite red potatoes
  • fresh rosemary sprigs
  • 1 Tbsp olive oil
  • salt and pepper to taste

Instructions
 

  • Wash potatoes and cut into 1/4s creating small wedges of equal size. If potatoes are large, you might have to cut them into more pieces
  • Remove rosemary leaves from stems and chop
  • place potatoes in a large mixing bowl and drizzle with just enough olive oil to coat. Season with salt and pepper and rosemary, tossing to distribute seasonings.
  • Place potatoes in an even layer on your fryer rack or in your fryer basket
  • Cook at 400 degrees for 16-20 minutes or until golden

*you can also bake these potatoes on a sheet pan in the oven at 400 degrees for 40-45 minutes

One of the best things about this air fryer

is there’s barely any clean up!

There is a drip pan in the bottom that can be rinsed off

or put in the dishwasher and the racks are dishwasher safe too

This air fryer is great for heating up kids snacks,

like pizza rolls or leftover pizza slices

It’s so easy they can do it themselves!

The cooking times are so much faster than using your oven

and preheating it only takes 1-2 minutes

    What fun to have a new kitchen toy Jenna and how great that it’s easy enough for the kids to use for reheating! I was thinking that you had purchased an air fryer several years ago and wasn’t crazy about it…? Glad to know it’s a winner. 🙂

    • We did try 2 different air fryers 3-4 years ago, but returned them because we didn’t like the results. I think they are much improved now, and this particular model has gotten rave reviews…

    • Oh good, I look forward to seeing what you do with yours! I tried 2 different brands 3-4 years ago when they first started becoming popular but wasn’t impressed and I returned them. So far, I’m liking this one and am looking forward to trying a lot of different things and ways to use it.

  5. I love my air fryer and am always looking for new ideas, so this is great. Thanks! I grow rosemary right outside the kitchen door and always have a bouquet on the countertop. I’m going to have to check and see if my AF is also a dehydrator. That’s pretty awesome. Happy New Year to you!

    • Rosemary is one of the things I can grow and it’s so handy to have available…air fryers seem to be like Brussels sprouts, everyone seems to either love them or hate them 😂

    These sound like the perfect thing to fix in the air fryer. I bought myself a Ninja Grill/Air Fryer, but haven’t taken it out of the box. I think I’m afraid of the space that it will take and if I would use it enough.
    I just fixed your best 4 ingredient dinner ever, but had a box of pasta and then I divided it into two casseroles, with one to eat and one to freeze. I know I’ll love it, Jenna!
