Throwback Thursday, Slow Cooker Chicken Parmigiana Sliders

As many of you know, I share a house with my son,

a dedicated single dad and a very busy residential contractor

His 2 boys spend part of the week with us

and every other weekend

They are always with us on Tues, Wed, and often Thurs~

These are busy weeknights this Spring,

Super Boy has baseball practice 2 nights,

Big E has Lacrosse practice 2 nights, plus cub scouts…

all taking place during normal dinner time hours 5-7:30

I help out by doing some of the driving

and making sure dinner is ready when these hungry boys get home

The slow cooker really comes in handy!

This is an embarrassingly easy recipe, and very family friendly

Boneless chicken thighs, Marinara sauce,

minced onion, garlic and Italian seasoning

DSC_0029

Pour the sauce over the seasoned chicken,

cover and go about your day

DSC_0011

Cook on low for 6-8 hours

The chicken will be very tender,

you can shred it with 2 forks or leave it in pieces

Spread butter and garlic bread seasoning on slider buns and toast

DSC_0012

Place chicken on buns and top with shaved Parmesan cheese

DSC_0014

You can also serve the chicken on a piece of Texas Toast

Or on top of pasta, like easy Ready Pasta,

all you have to do is microwave it for 1 minute!

This tastes really good after a long busy day~

  3. Jenna, this looks delicious and child friendly. Can you believe I don’t own a slow cooker? I am not even sure why! Happy Thursday!

  4. What a good grandmother! I’m sure you keep them well fed!

  5. I learned to love my slow cooker when my two boys were little like the two you have. What a time saver and it makes the house smell SO GOOD! I haven’t thought of using it for anything like this recipe, so even though my two are grown, I’ll have to give it try.

Jenna this sounds so easy and handy…love hearing about your family and I do remember those busy busy busy late afternoons when one didn’t think a hot meal would be available and fast food would suddenly be on the menu. Even though we do not have those “deadlines” anymore…we still look for quick and easy meals. Thanks for the recipe, I will be making it very soon my friend.

Sounds so good. I wonder if you could substitute thighs for breasts? I’m sure you can. We are weirdly picky and only eat white meat. I was that kid at Sunday dinner after church refusing the drumsticks and not eating if my parents and grandparents ate all the breasts haha! That was the only food I was picky about though so my mom got lucky. This is something I’m going to try. Now I just have to get my picky kid to try it lol. He will eat chicken parm, so cross your fingers for me! Thanks for sharing on Crafty Creators!
