Take-out Tuesday, Holiday Flatbread with Thanksgiving Leftovers

I know this is a very busy week in the USA

with many of us preparing to celebrate Thanksgiving

with a feast of fall foods

And with that feast comes leftovers

I am actually traveling today so I am re-sharing a great recipe

for a flatbread that will transform your holiday food!

Cranberry is a traditional flavor for the fall and winter holidays,

so that is the base for this festive flatbread

Naan bread is a great option for the crust,

but you can certainly use your favorite pizza crust,

flatbread or french bread*

*partially cook raw pizza crust until it begins to turn golden, or toast french bread before adding toppings

Spread the crust with a layer of cranberry sauce,

I used whole berry canned cranberry sauce,

but homemade would be even better

Vermont sharp white cheddar cheese is a nice contrast

to the cranberry sauce and helps

balance the sweetness

Next, add a layer of turkey or ham or both

Next comes a layer of ripe sweet pear slices and a sprinkle of bleu cheese

goat cheese, or Parmesan cheese

For the final touch, a sprinkle of walnuts and dried cranberries

and it’s ready for the oven

I cooked this one in a toaster oven on the toast cycle,

but you can bake it in a regular oven at 400 for about 10 minutes

All the holiday flavors you crave on a pizza!

Holiday Cranberry Flatbread

Use your holiday leftovers to make this delicious flatbread!

Cook Time 10 minutes

Ingredients
  

  • 1 large naan bread* see notes for crust variations
  • 1/3-1/2 cup cranberry sauce jellied, whole berry or homemade
  • 2-3 oz. sharp white cheddar cheese grated
  • 1 cup chopped ham turkey or both
  • 1 large ripe pear sliced, peel on
  • 1/4 cup bleu cheese crumbles or goat cheese or Parmesan
  • 1-2 oz. walnuts
  • dried cranberries optional**

Instructions
 

  • Spread cranberry sauce over naan or crust in an even layer.
  • Top with grated sharp white cheddar. Add meat, then an even layer of pear slices.
  • Top with walnuts and dried cranberries and sprinkle with bleu cheese {or goat or Parmesan}.
  • Toast in a toaster oven until cheese has melted and flatbread is golden, or bake in a 400 oven for 10 minutes. Watch carefully during cooking time to insure nuts don’t burn**
  • Cut into smaller pieces for appetizers

Notes

*crust variations:
Before topping, partially cook raw pizza crust dough, puff pastry, or crescent roll dough until it is firm and begins to turn golden or lightly toast french bread or crostini slices
 
**tuck nuts under cheese for protection
