Take-out Tuesday, Butterfinger Cheesecake Parfaits

I made these decadent parfaits for HHjr’s Valentine birthday last week
He doesn’t like cake but he loves cheesecake and ice cream
These parfaits are kind of a combo of cheesecake and ice cream
and incredibly easy to make!

Butterfinger Candy Bars, Nutter Butter Cookies,
cream cheese, brown sugar, Cool Whip
and chocolate or caramel sauce

Start by crumbling the cookies~
I put cookies in a ziplock bag and flattened them with a rolling pin
and squeezed them with my hands
You could also do this in a food processor

Do the same thing with the Butterfinger candy bars

Make the cheesecake filling
by beating the cream cheese with the Cool Whip

Add brown sugar and mix

Then fold in crushed candy bars


Put a layer of cookie crumbs in the bottom of short glasses or small jars
Put cheesecake mixture on top of the cookie layer
dividing it evenly between the glasses

Press filling down with the back of a spoon
and smooth the top into an even layer
and wipe any excess off the sides of the glasses,
then sprinkle reserved candy bar pieces on top

Then give them a drizzle of caramel or chocolate sauce

Chill for several hours before serving
These will keep covered in the refrigerator for at least a week
so make ahead and enjoy for days!

Butterfinger Cheesecake Parfait
Equipment
- 7 glasses or small jars
Ingredients
- 1 tub 8 oz. Cool Whip, thawed
- 8 oz whipped cream cheese softened
- 1/4 cup brown sugar
- 16 fun size Butterfinger* candy bars see notes below
- 12 Nutter Butter Cookies* I used Double Nutty [2x the filling]
- chocolate or caramel sauce
Instructions
- Beat cream cheese with Cool Whip
- Add brown sugar and mix again
- Crush 12 Butterfingers
- Fold 3/4 of the Butterfinger pieces into the Cool Whip
- Crush or crumble cookies
- Place about 2 large spoonfuls of cookie crumbs in the bottom of each jar or glass
- Top with Cool Whip mixture, placing about 1/4 cup in each glass, then adding more dividing mixture evenly between glasses. Press down with the back of a spoon making an even surface across the top.
- Break or cut remaining 4 candy bars into 1/2 inch pieces and top parfaits and sprinkle any remaining crumbs on top.
- Drizzle with caramel or chocolate sauce
