Cinco de Mayo Recipes from Apps to Dessert!
May 5, Cinco de Mayo is coming up
Be festive and serve a Mexican inspired meal!
These recipes are creative twists on traditional Tex-Mex favorites,
nachos, tacos, burritos, and enchiladas

Start the party with a Skinny Margarita,
Tequila with a dash of Triple Sec and lime juice over ice

A Fry-Tot-To is a show stopper and creates an instant fiesta!
Sausage & Corn Queso is poured over Tater Tot potatoes
and surrounded by french fries

Place individual cups of salsa
garnished with sour cream and grated cheese
on a board with tortilla or corn chips
for a Mexican style charcuterie board

Slow Cooker Loaded Taco Dip is simply taco seasoned ground beef
with chopped sweet peppers, onions, refried beans and cheese

Taco Bread Boat can be served as an appetizer or main dish

Go with a Taco Lettuce Crunch Wrap if you want to go lighter

Here’s a twist on enchiladas, Enchilada Rice Casserole
has all the flavors of enchiladas baked with rice in a dish

We love Taco Salad and we have it regularly
but these Chicken Fajita Salad Bowls are really good too,
especially served with a Creamy Corn Muffin on the side

Queso is a great topping for burritos
Queso Topped Burritos are filled with taco meat, corn, black beans,
peppers, and onions and a little enchilada sauce

Quesadillas can be made infinite number of ways,
and they don’t always have to be filled with Mexican ingredients
I love to make quesadillas with a little of this and a little of that
This Asparagus, Bacon, Bleu and Corn Quesadilla was so good,
I used the same ingredients a few nights later for a flatbread

Chicken, Corn & Black Bean Lasagna
starts out with slow cooking the chicken in green enchilada sauce,
then assembling the lasagna with layers of tortillas,
chicken mixed with corn and black beans,
more sauce and cheese

Finish your meal with a
Sombrero Cookie or a Strawberry Margarita Dessert Taco!
Sombrero Cookies are sugar cookies
topped with a gum drop, icing and sprinkles

Strawberry Margarita Dessert Tacos have a pecan lace cookie shell
filled with a creamy margarita filling,
garnished with strawberries and coconut

Your desserts reminded me of a recipe I used to make, strawberry nachos. I might have to make them again! I can no longer eat a lot of spicy or dairy but your recipes always look so yummy. 😋
