Take-out Tuesday, Taquito Casserole

I saw a recipe on Pinterest called Lazy Enchiladas I was intriqued~

We love enchiladas and Mexican food, and I am all about lazy 😂

so I decided to give it a try

It was perfect for Cinco de Mayo!

The “lazy” part is that this recipe uses frozen taquitos

and only 5 other basic ingredients, refried beans,

enchilada sauce, grated cheese, sour cream and green onions

I even made it “lazier” by buying already sliced green onions

First, spread the refried beans into an even layer

in the bottom of a greased 9″ x 13″ baking dish

Next cover the refried beans with a layer of sour cream~

I always buy sour cream in the squeezable tubes

so I squirted some out

and then used the back of a spoon to spread it out

A layer of cheese~

I love Kraft’s Creamy Melt cheeses

A sprinkle of sliced green onions

Next place the frozen taquitos on top,

placing them tightly together down the center,

and putting some along the sides

to completely cover the beans and cheese

Pour enchilada sauce over the taquitos

making sure they are all covered with sauce

Cover the top with cheese

Cover with foil and refrigerate for several hours at this point

for baking later if desired

When ready to cook, loosen the foil a little and place it in the oven

Bake at 350 degrees for 30 minutes, uncover,

and continue baking for 15 minutes until bubbly

Cut into squares to serve,

and garnish with chopped tomatoes and green onions,

lettuce and sour cream if desired

Taquito Casserole

Frozen taquitos are baked on a bed of refried beans, covered with enchilada sauce and cheese for an easy and delicious Tex-Mex casserole. Garnish with tomatoes and serve with lettuce for a wonderful meal

Equipment

  • 1 9" x 13" baking dish, greased

Ingredients
  

  • 1 box 20 frozen taquitos, beef or chicken
  • 1 can 16oz refried beans
  • 1 can 19oz enchilada sauce, red or green
  • 2 cups shredded cheese I used Creamy Melt Mexican
  • 1/2 cup sliced green onions
  • 1/2 cup sour cream plus more for garnish
  • Cherry tomatoes, halved for garnish
  • lettuce for serving optional

Instructions
 

  • Preheat oven to 350° F
  • Scoop the refried beans into the bottom of your dish and spread them out evenly with the back of a large spoon.
  • Top with a thin layer of sour cream
  • Sprinkle with 3/4 cup cheese and 1/4 cup green onions
  • Place the frozen taquitos in a single layer over the refried beans, placing four of them in the opposite direction in order to cover as much surface as possible.
  • Evenly pour the enchilada sauce over top making sure all the taquitos are covered
  • Sprinkle with remaining cheese
  • Cover with foil. The casserole can be put in the refrigerator at this point for baking later if desired.
  • Loosen foil and bake casserole at 350 degrees for 30 minutes. Uncover and bake for 15 more minutes until bubbly
  • Cut into large squares to serve. Garnish with chopped tomatoes, green onions and sour cream, and serve with lettuce
