Throwback Thursday, Asian Peach Slaw & Pulled Pork Wrap
This is a great recipe for Summer
The slaw is light and refreshing
and is a wonderful side dish with whatever you’re grilling
from hot dogs and hamburgers to BBQ chicken or fish

It’s made with bean sprouts, snow peas, coleslaw mix,
fresh peaches, cucumber, and green onion
with a tangy Ginger Mandarin dressing by Brianna’s

Look for the small packages of snow peas and bean sprouts
They are washed and ready for cooking
1-2 minutes in the microwave and they’re done!

A few quick chops and everything goes in a bowl
Drizzle with dressing and a dash of soy sauce
This makes a refreshing summer salad
and it’s great in a wrap with chicken or pork

We often have BBQ ribs or pulled pork

and the leftovers are wonderful with this slaw in a wrap

I like to lightly saute flour tortillas for wraps

Heat the leftover pulled pork and drizzle with BBQ sauce
Place it on the tortilla and top with slaw

You can substitute mandarin oranges for the peaches if desired

This sounds delicious. I think I would prefer it as a salad, but I’m sure both ways are good. Now I just need to fly to the South to snag some fresh tree ripened peaches.
