Green Salad with Strawberries, Oranges, and Almonds

This salad will brighten any gloomy gray winter day

Mixed salad greens are topped with fresh strawberries,

mandarin oranges, buttery almonds and bleu cheese

Every bite is a burst of flavor

that will chase the winter blues away!

The juicy sweet strawberries and oranges,

savory almonds and tangy bleu cheese

are a delicious contrast of flavors and textures

A wonderful lunch or side dish with any dinner

Just drizzle with a little poppy seed dressing

or other very light vinaigrette~

it doesn’t need much, the flavor is already there!

Green Salad with Strawberries, Oranges and Almonds

The contrast of flavors and textures in this sweet and savory salad will make your taste buds sing
Prep Time 10 minutes
Course Salad, Side Dish
Cuisine American

Ingredients
  

  • salad greens
  • fresh strawberries, cut in half
  • mandarin oranges
  • bleu cheese crumbles or feta cheese
  • buttery almonds
  • poppy seed dressiing

Instructions
 

  • Adjust ingredient amounts as needed
  • Put salad greens in a large bowl or on a large plate
  • Top with strawberries, oranges, almonds and bleu cheese
  • Drizzle lightly with poppy seed dressing

Buttery Almonds

These sweet and savory almonds are a wonderful addition to salads, vegetables and party dips. They only take a few minutes to make and can be stored in a jar and will stay fresh for weeks
Prep Time 10 minutes
Cool 15 minutes
Course condiment
Cuisine American

Ingredients
  

  • 2 cups sliced almonds
  • 1 Tbsp butter
  • 1 Tbsp olive oil
  • brown sugar
  • kosher salt

Instructions
 

  • Saute almond slices in a large skillet in butter and Olive oil over medium heat
  • Sprinkle the nuts liberally with brown sugar and Kosher salt.
  • The brown sugar will melt and caramelize on the nuts. Stir often and watch carefully so the nuts don’t burn. Don't walk away, this literally only takes 3-4 minutes
  • When they have begun to brown turn out onto wax paper or foil to cool. Store in a jar in your pantry or freezer. Makes 2 cups.

Notes

 I make a fresh jar of these every few weeks to be handy for cooking.

    Interesting ‘read’! Thank you! In Australia fruit and salad vegetables are not usually mixed . . . so the ‘Anonymous’ words (above) ring a bell with me 🙂 ! For me strawberries and oranges are simply there for healthy and tasty eating . . .
