Gifts From the Kitchen, Garlic Oil with Thyme

Has it rained alot where you live?  It has poured rain here almost everyday for months.  Now, I’m not complaining because I’ll take rain over a drought any day, but our garden is really confused.  We know nothing about gardening anyway, so we don’t need any extra challenges.  So far this year we have harvested one jalapeno~

This is our okra.  Yep, we harvested one perfect okra.  HHjr immediately fried it up! We each got 2 pieces.  It was quite thrilling~ HHjr said, “I think we’re supposed to get more than one at a time…”  Ha! He’s so funny.

Our herbs have been growing like gangbusters, whatever that means, so I decided to be all Martha Stewart like and make some thyme infused garlic oil.

This is actually no effort at all and it smells amazing~

the hardest part is slicing the garlic cloves,  then you toss them into a saucepan with the fresh thyme and let it all slowly simmer in the olive oil

That’s it!  Strain it into a cute little bottle…

I got the recipe from Ina Garten, she is one of my favorites, she’s more down to earth than Martha, and her recipes are always mouth-watering.  I’ve never made anything of hers that I didn’t love~

We are ever hopeful though, the sun came out finally over the weekend and look what we found! Roma tomatoes!  Aren’t they just so pretty?! And look how many there are! A bountiful crop!  We’re farmers! Living off the land!

Use the garlic oil as you would olive oil if you want to add another layer of flavor~salad dressing, sauteeing, roasting~

some salami, ham or prosciutto and some Parmesan cheese and dinner was ready~

Here’s the recipe for the garlic oil

GARLIC OIL with THYME

25 minutes
Course condiment
Cuisine American
Servings 1 cup

Ingredients
  

  • 1 cup extra virgin olive oil
  • 5 garlic cloves
  • 8 stems of fresh thyme
  • dash red pepper
  • small bottle or decanter

Instructions
 

  • Slice garlic cloves and put in a small sauce pan with oil and thyme and pepper. Turn burner on to low.
  • Let simmer until it comes to a boil, about 20 minutes. Remove from heat and set aside to cool.
  • strain garlic and thyme from oil and pour into a clean bottle with a cork or cap. Makes 1 cup

    lots of goodies here and i have decided you made me way to hungry for this hour of the day! i love making oils and vinegars from the garden, ok i love anything from the garden, it makes me feel so lucky to be able to have that option to grow anything that i want to be sure and enjoy it. i like how you fused your oil, i just drop it all in a bottle and leave it, and i am sure this is how you die of airborne mutant diseases, i should take you lead!

    Farmers living off the land, LOL! I’m going on the record and COMPLAIN about all the rain!! We’re flooding and roads have sink holes, we’ve had almost as much rain in June & July as all of last year and last year we had a gracious plenty! Enough ranting..

    .I can practically smell the aroma of the thyme and garlic infused oil! I could just dunk a chunk of bread in it or have my hubby use it for aftershave 🙂

  9. The garlic oil looks delicious – can’t wait to try it. Can I ask a silly question? How long does it keep and do you leave it at room temp. like you would plain olive oil?

    • I’m not really sure about the shelf life as I just made it. It did get a little cloudy after it cooled. You can store in the fridge for safe keeping, or in a dark cupboard. Olive oil shouldn’t be left in the light unless it’s used quickly. I go through it pretty fast so it’s never an issue at my house. Thanks for visiting

  10. I am going to try this oil – sounds tasty. Have you tried it with other herbs? Have you ever kept the herbs in the oil in the jar?

    • hi Patti, This is my first time, so easy, I plan to do many more versions so I’ll keep you posted! Not sure of the shelf life, I would keep in the fridge if you don’t use it within a week or two.
