Recipe Box, Maple Bacon Wrapped Pear Salad

Pears and bacon make the perfect couple!

Wrapping pear slices with bacon and roasting them, takes this couple to celebrity status!

It only takes a minute to wrap each pear slice in 1/3 piece of bacon and lay them on a rack over a shallow pan

Bake at 400, 30-40 minutes or until bacon is done

Saute pecan pieces and walnuts in a skillet with butter, brown sugar and salt

Once the nuts are caramelized, transfer them to a piece of wax paper to cool

Toss greens and nuts with your favorite vinaigrette, I recommend  Mustard and Maple Dressing

Bacon Wrapped Pear Salad

Bacon wrapped roasted pears make this salad mouthwatering
Prep Time 10 minutes
Cook Time 40 minutes
Course Appetizer, Main Course, Salad
Servings 4

Ingredients
  

Salad

  • 2 ripe pears
  • 5 slices Maple bacon or regular bacon
  • 8 cups salad greens or enough for 4 people [ I used fresh spinach and a spring green mix]
  • 1/2 cup pecan pieces
  • 1/2 cup walnut pieces
  • 1 T butter
  • 1/4 cup brown sugar
  • 1 tsp salt
  • bleu cheese [optional]
  • vinaigrette*

Mustard & Maple Dressing

  • 1 Tbsp dijon or honey mustard
  • 1 Tbsp real maple syrup
  • 1 tsp apple cider vinegar
  • 1/4 cup olive oil
  • salt and pepper to taste

Instructions
 

Salad

  • Line a baking sheet with foil and top with a baking rack. Spray rack with cooking oil spray.
  • Cut each pear into about 8 wedges or pieces. Cut bacon into 1/3s and wrap each pear wedge with a piece of bacon and place on baking rack seam side down.
  • While pears are roasting, Melt butter in a medium skillet. Add nuts and sprinkle with sugar and salt. Cook over medium, stirring, until nuts just start to caramelize, being careful not to burn.
  • Transfer nuts to a sheet of wax paper to cool and set.
  • Roast pears at 400 for 30-40 minutes until bacon is cooked through
  • When pears and bacon are done, toss greens with vinaigrette and nuts and top with 3-4 bacon wrapped pears. Sprinkle with bleu cheese if desired.

Mustard Maple Dressing

  • In a small jar, mix Dijon, maple syrup, vinegar, olive oil, and salt and pepper. Put the lid on the jar and shake well to mix.
  • Store in refrigerator.  Let dressing sit out before using if necessary to mix after chilling.

This easy salad will have you out of the kitchen fast and you of course will be a rock star!
