Gifts from the Kitchen, Tomato Basil Butter

This flavorful butter will brighten up your summer! Make up a batch to take to the next BBQ or picnic, your host will love having some to stash away!
Roast some tomatoes with some olive oil and salt & pepper
It’s a beautiful thing!
Slide all this yumminess into a dish of softened butter
Add some chopped fresh basil, pesto, or basil paste
A little goes a long way~
Mix it all together and stick in the fridge to set up
Use this on bread, sandwiches, corn on the cob or any vegetables~
We had it on toasted french bread slices
Some were topped with Parmesan
So good!

Tomato Basil Butter
Ingredients
- 1/2 stick unsalted butter softened
- 20 grape tomatoes
- 1 tsp basil paste or freshly chopped basil or pesto to taste
- olive oil
- salt and pepper
Instructions
- Put tomatoes on a foil lined baking sheet. Drizzle with olive oil and season.
- Roast at 400 for 15-20 minutes until they burst and are cooked and soft.
- Mix warm tomatoes with soft butter and basil.
- Refrigerate at least 1 hour until butter has set. Use on toast, rolls, sandwiches and vegetables.
We ate all ours before I had a chance to play with packaging, but you could put this in a small tub or in a jar
or roll it into a log
and tie it up with a ribbon for giving~
This toast is perfect with just about anything, and makes a great appetizer too
