Recipe Box, Going in Circles!

I’m not big on kitchen gadgets, but this one caught my eye

An interesting thing happened when I got this out to play

It turned into a “man magnet”

“How does that thing work?” asked HH

“I’m not sure, I don’t think it’s too complicated…”  I replied

“That is really cool!”  he said, “Let’s try a potato!!”

And off he goes!

Potato mushrooms!

Anyhooo….

Put the potatoes in a bowl of cold water and stick them in the fridge for a few hours [even overnight]

This removes some of the starch and makes a crispier fry~ see all the white gunk?

Turn the potatoes out onto a large clean kitchen towel and pat dry

Then put them on some paper towels to dry more, wet fries won’t fry!

I used the Pioneer Woman’s 2 fry method for perfect french fries.  You can see her recipe here.  Fry in small batches, about 4-5 minutes in medium hot oil.  Remove potatoes before they start to brown and drain on paper towels

Once all the potatoes have been fried once, turn heat up a little and return potatoes to oil and fry until golden and crispy, about 3-4 minutes

Drain on paper towels and immediately sprinkle with kosher salt

You can hold these in a 200 degree oven for a little while while you finish frying them all up

They were crispy and light and very irresistible!

I made a simple Pesto Vegetable Stir Fry with the squash noodles by sauteing mushrooms and peppers in a little olive oil until done

Add the squash noodles and a dollop of pesto.  Cover and let steam for a few minutes to soften the squash

Stir in some Parmesan cheese and let everything get happy

We had these 2 side dishes with some BBQ pork sandwiches

LIGHT AND CRISPY FRIES

Prep Time 4 minutes
Cook Time 15 minutes
Course Appetizer, Side Dish
Cuisine American, French

Equipment

  • Spiralizer

Ingredients
  

  • 2 cups Peanut Vegetable or Canola oil for frying
  • kosher salt

Instructions
 

  • Cut potatoes with a spiralizer or cut into fries with a knife. Soak potatoes for several hours or overnight in a bowl of cold water, in the refrigerator. Make sure water covers the potatoes.
  • When ready to cook, drain potatoes thoroughly on a kitchen towel and again on paper towels to get potatoes dry.
  • Put oil in a deep pan. Heat oil to medium heat and fry potatoes in batches for 4-5 minutes to soften and start the cooking process. Drain on paper towels.
  • Increase heat a little and fry potatoes in batches again, this time until golden and crispy. Remove to paper towels and sprinkle immediately with salt. Keep potatoes warm in a 200 degree oven. Makes 4 large servings

PESTO VEGETABLE STIR FRY

Prep Time 10 minutes
Course Side Dish
Cuisine American, Italian
Servings 2

Ingredients
  

  • 1 medium zucchini
  • 1 yellow squash
  • 1/2 red or yellow pepper diced
  • 4 oz sliced mushrooms
  • 2 T pesto
  • 2-4 T shaved Parmesan cheese
  • 1 tsp olive oil
  • salt and pepper

Instructions
 

  • Cut squash into long ribbons with a spiralizer or a knife.
  • Saute peppers and mushrooms in olive oil over medium high heat until mushrooms are golden and peppers are soft. Add squash ribbons and pesto. Cover and reduce heat to simmer. Cook 3-4 minutes.
  • Uncover and stir, adding Parmesan and seasoning to taste. Let Parmesan melt into noodles. Serves 2

  1. I just might have to make a trip to Amazon! This is just the kind of kitchen gadget J likes!:-) He has a mandolin and another chopper/slicer gadget he uses regularly. He would certainly have fun with this one too.

    I had it in my hand, but decided against it. I am now re tempted! I love the mushroom you ended up with! We don’t eat zucchini, so I was thinking I would only use it for potatoes and we don’t eat fries that often. Have you tried it with anything else?

    • So far I’ve only done potatoes and squash~I want to try sweet potatoes and maybe a cucumber for a fancy salad, who knows! The fries were worth it though, they were really good!! I want to let my grands help, they will love it!

    Hi Jenna, Love the spiralizer and potato mushrooms, who knew?! My kitchen cabinets overfloweth so I picked up a vegetti gadget that fits in my kitchen drawer. I can see how the spiralizer would be a man magnet! I have an Amazon Prime account and it’s worth it for the free shipping! I’m waiting for them to have those drones that make the deliveries the same day 🙂
