Recipe Box, Ham & Mushroom Alfredo Pot Pie and Pizza

It’s time to start thinking pot pies
Full of meat and vegetables
With a buttery flaky crust
This version is a little unconventional, ham instead of chicken
Mushrooms and asparagus instead of peas and carrots
A creamy mushroom alfredo sauce
Gruyere cheese to help bind the ingredients together
Assemble this pie like you would a quiche
Put the pie crust dough in a deep pie pan and coat with a layer of mustard or honey mustard [optional]
Layer in the onions, ham, cheese, asparagus, and mushrooms
Pour sauce slowly over all
Instead of a top crust, I sprinkled the pie with finely grated Parmesan. You could also use breadcrumbs or a pie crust lattice
You can prepare this earlier in the day and refrigerate it for several hours before baking. Do not refrigerate overnight as the vegetables might become soggy.

Ham & Mushroom Alfredo Pot Pie
Ingredients
- 1 refrigerated pie crust dough round
- 1 small onion chopped
- 8 oz sliced mushrooms
- 20 asparagus spears
- 3-4 cups chopped flavorful ham
- 1 cup mushroom alfredo sauce {Bertolli}
- 3 ounces Gruyère cheese sliced or grated
- 1-2 oz finely grated Parmesan
- 1-2 T mustard or honey mustard for brushing on crust optional
- 1 T butter
- 1-2 T olive oil
- salt and pepper
Instructions
- Place pie crust dough in a deep dish pie pan or quiche dish. Spread with mustard if desired.
- Saute onion in a little butter and 1 T olive oil. When soft add to pie crust. Top with ham, then a layer of Gruyère cheese.
- Microwave asparagus in a towel on high for 2 minutes. Cut into one inch pieces and place on top of cheese.
- Saute mushrooms over medium high heat in the butter from the onions, adding more olive oil if necessary, until golden and juices have released. Place in pie.
- Slowly pour mushroom alfredo sauce over all and sprinkle with Parmesan. Bake at 350 for 45-60 minutes. Let pie sit for a few minutes before cutting
Notes
You can also make a quick pizza with this sauce
Top a sliced loaf piece of french bread with ham pieces, cover with sauce and Parmesan and bake at 400 for 10 minutes
Cut into pieces to enjoy as a snack or with soup or salad

Ham Alfredo Pizza
Ingredients
- 1 loaf of french bread sliced horizontally
- 2-4 oz ham slices cut in pieces
- 1/2 cup mushroom alfredo sauce
- 2 oz Parmesan cheese
Instructions
- Top bread with ham, then sauce and top with Parmesan. Bake at 400 for 10 minutes or until heated through and golden. Slice each loaf into 1/3s. Two servings or 6 appetizer servings
