Recipe Box, Deli Sandwich Ravioli Bake

Have you finished your shopping and wrapped every package?
Are your halls all decked…whatever that is?
Have you baked cookies for Santa and gotten jolly?
And decorated your door with boughs of holly?
Well, me neither, but don’t fret…Here’s a dish you can make without breaking a sweat!
This “raid the refrigerator casserole,” has everything you need to keep going during these last days before Christmas…
It’s warm and comforting, but in a scaled down way, so you can still enjoy treats at the next holiday party
Low fat mozzarella, flavorful Parmesan, and a lightened up Alfredo sauce keep things very tasty and the calories down
Saute the salami and ham to render out the fat and give it some color and amp up the flavor
A little sauce goes in the bottom of the dish, then start to layer
Use vegetable ravioli and add fresh vegetables too, if you have some, like spinach leaves, leftover cooked broccoli or squash, red peppers ~ the more vegetables the merrier!
Layer like a lasagna, noodles, meat, sauce cheese, repeating twice and ending with cheese on top
It only takes 15 minutes to assemble for baking, and you can hold it in the fridge for 24 hours before baking if desired
It looks very tempting once it’s out of the oven
And will help you put the Merry back in your Ho Ho Ho! 🎄

Deli Sandwich Ravioli Bake
Ingredients
- 1 small package fresh vegetable ravioli such as spinach, or asparagus
- 6-8 slices thin salami
- 6-8 thin slices deli sandwich ham
- 1 cup grated mozzarella cheese
- 1/2 cup shaved Parmesan cheese
- 1 cup Light Alfredo sauce {I like Classico Light Asiago Romano Alfredo}
Instructions
- Cook pasta according to package directions.
- While pasta is cooking dice meat into 1 inch pieces and place in a non stick skillet over medium high heat. Saute several minutes to brown and render fat. Remove from heat.
- Spray a 1 quart baking dish with cooking oil spray.
- Put 1/3 cup of Alfredo sauce into the bottom of dish in an even layer.
- Top with an even layer of ravioli.
- Sprinkle with 1/2 of meat, drizzle with 1/3 cup sauce, and sprinkle with 1/2 of cheeses.
- Repeat layers, ending with cheese. Bake at 350 until heated through and bubbly, about 45 minutes.
- Can be prepared a day ahead and refrigerated if desired.
Dinner’s ready, relax and enjoy!
