Party Panache, Tomato Canapés with Bacon Chive Aioli

Are you dreaming of warmer weather and juicy red ripe summer tomatoes?
Even in the winter months, you can satisfy your fresh tomato cravings with these savory canapés topped with grape tomatoes
I have been making versions of these canapés for a long time, and people always, always, rave
And there is never any left, e v e r, not even a single crumb…
Probably because there’s bacon involved 🐷
So here’s the dealio, toast thin white or wheat bread and cut into cute little squares
Mix chives and bacon with just enough mayonnaise* to bind together
*Use bleu cheese or ranch salad dressing if you prefer
Season with a little freshly ground black pepper
Mix it up, spread it on, and top with sliced cherry tomato halves
Crazy easy, crazy good!

TOMATO CANAPÉS WITH BACON CHIVE AIOLI
Ingredients
- 6 slices thin bread like Pepperidge Farm thin white
- 6 slices bacon cooked
- 2 green onion tops
- 1/2 cup good mayonnaise or salad dressing
- 12 grape tomatoes
- black pepper
Instructions
- Lightly toast bread. Cut each slice into 4 squares*. Chop green onion tops and bacon. Combine with just enough mayonnaise to bind. Season with pepper.
- Cut ends off tomatoes and slice. Spread bacon mixture on toast squares and top with tomato slices. You can make these several hours ahead and refrigerate. Make a lot, they will go fast!
