Recipe Box, Red Snapper & Sweet Chili Pineapple Grilled Shrimp

After posting photos of fresh red snapper I know you are expecting an amazing gourmet recipe

Well, here’s the thing…

I don’t have one 😳

We just grill it with a little olive oil, salt & pepper and maybe some blackened seasoning or lemon

I don’t like fish  😝

Which is why I don’t post a lot of fish recipes…

BUT!

I LOVE shrimp  😍

Check out this easy peasy recipe for grilled shrimp adapted from Closet Cooking

Make a quick basting sauce with coconut cream, pineapple tidbits and sweet chili sauce

Skewer peeled and deveined shrimp and season with salt and pepper

Grill shrimp over medium hot coals 2-3 minutes per side, basting with sauce during the last few minutes

You could also broil the shrimp or saute them in a skillet, adding the sauce near the end to coat.  Be careful not to overcook shrimp or it will become rubbery

Sweet Chili Pineapple Grilled Shrimp

Prep Time 10 minutes
Cook Time 6 minutes
Course Appetizer, Cook out, Main Course
Cuisine American
Servings 4

Ingredients
  

  • 1 pound fresh medium shrimp 26/30 count, peeled and deveined
  • 1/2 cup Asian sweet chili sauce
  • 1/4 cup pineapple tidbits
  • 1/4 cup cream of coconut*
  • salt & pepper

Instructions
 

  • Thread shrimp onto skewers and season with salt and pepper.
  • Combine chili sauce with pineapple and cream of coconut and mix well.
  • Grill shrimp over medium hot coals, 2-3 minutes per side and baste with sauce during the final 2 minutes. Baste liberally once more before serving.
  • Shrimp can also be broiled or sauteed, add the sauce near the end of cooking time.

  5. Jenna, I gasped when I read you don’t like fish and you are on the Gulf Coast with that beautiful snapper. You see, my hubs is just like you, doesn’t like fish but loves shrimp! I like all fish as long as it is cooked, don’t do the raw stuff! I am saving the shrimp recipe, looks delicious!

    • I know, I wish I did, but I do enjoy watching others enjoy, and catch and all the things that go with fish- I love to paint them too! I’m really not much of a meat eater, veggies and salads are my thing. Thanks Pam, the shrimp couldn’t be easier and it’s delicious, just the right amount of kick and sweet >

  9. This looks dee-licious! I like fish and shrimp, although it took me well into adulthood to learn to eat it any way other than fried! Well, I did grow up in the South you know. I remember when my Daddy used to go Deep Sea Fishing occasionally (that’s what he called it) and would bring back red snapper. Usually our fish was catfish, crappie, bream and bass. My mother refused to clean them, but she would cook it, and it was so good. I don’t think I have ever tasted fish since then that was so good. She wouldn’t do shrimp because she claimed a shellfish allergy, so it wasn’t till I was a grownup that I ever had any! I will be saving your recipe because it looks fantastic.
