Recipe Box, Pumpkin Patch Salad

This salad looks fancy but it’s oh so easy
It’s just salad greens, sliced apples, cranberries, walnuts & pepitas
BUT! Put it on a pumpkin plate and add a perky orange pepper
Cut the top off so you can fill it with salad
Serve it with Ham & Cheese Pumpkin Pie “croutons”
With Pumpkin Vinaigrette on the side
And it’s a party in the pumpkin patch!
The Pumpkin Vinaigrette recipe is the brilliant creation of Chris at the Café Sucre Farine
What a great dressing for an autumn salad!
Just put everything in a jar and shake shake shake-

Pumpkin Patch Salad
Ingredients
Salad
- torn fresh salad greens like mesculan mix, romaine, baby kale, fresh spinach
- orange sweet peppers 1 per serving
- sliced apples
- roasted pepitas {pumpkin seeds} dried cranberries, walnuts
Pumpkin Vinaigrette
- 1/4 cup apple cider vinegar
- 1/3 cup olive oil
- 1/4 cup pumpkin pureé
- 3 T real maple syrup
- 1 T Dijon mustard
- 1 T fresh thyme leaves chopped
- 1/2 tsp minced garlic
- salt & pepper to taste
Instructions
Pumpkin Vinaigrette
- Put everything in a pint jar with a lid. Shake vigoursly to combine. Refrigerate. Shake again before serving. Makes about 1 cup. Store in refrigerator for up to a week.
Salad
- Cut top off peppers and reserve.
- Carefully clean out the seeds and membrane from inside peppers.
- Toss greens with other ingredients.
- Set pepper on a plate, fill and surround with salad. Drizzle dressing over all or serve on the side.
Notes
If you want to really have fun, carve a pumpkin face in your pepper!

Apples, cranberries, walnuts & pepitas are the making for a delicious fall salad Jenna, but the pumpkin-maple vinaigrette takes it over the top along with your festive presentation! I love the pepper/ carved Jack and pie croutons 🙂

I’ve used the cranberries and walnut package before and love it. The pumpkin puree dressing sounds wonderful, and I’ll bet the men at my house won’t even know it has pumpkin in it!
