Recipe Box, Jiffy Jiffy Cornbread

Ok, I have a confession to make…I hate cornbread…
shhhhh!
I’ll be kicked out of the South if word gets out!
When your husband is slaving over making a batch of chili, and asks you to make cornbread, you must rise to the challenge right??
Shhh…never admit you used a mix….
This cornbread is so moist, made with creamed corn, cheddar cheese and buttermilk
With just a touch of sweetness from the mix
It’s dense and rich, and just a slender slice is all you need
Leftovers freeze beautifully!
AND, now I love cornbread!
So sit back and sip your sweet tea
this cornbread practically makes itself!

Jiffy Jiffy Cornbread
Ingredients
- 2 boxes 8 oz., Jiffy Corn Muffin Mix
- 1 can 14 oz. creamed corn
- 2 eggs
- 1/4 cup buttermilk*
- 1 cup shredded sharp cheddar cheese
Instructions
- Combine eggs with corn muffin mix in a large mixing bowl. Add corn and buttermilk. Mix until batter is moistened and combined. Stir in cheese. Pour into a greased baking dish.
- Bake at 400 for 20-25 minutes or until golden and set. Let sit 5 minutes before cutting.
- Leftovers freeze beautifully

Jenna, your cornbread looks so moist and delicious! I am so glad that you now like cornbread. I had rather have cornbread than a biscuit or yeast roll. I can eat it anytime, anywhere. Jiffy mixes are always good!
Jenna, I have two boxes of Jiffy in my pantry at the moment! So easy to doctor with cheese, jalapenos, additional corn or sour cream! I’d rather have cornbread than banana pudding. 🙂

This looks good! A couple of years ago, I went to the Jiffy factory and they gave us samples. I’ve been enjoying a Jiffy corn casserole. Making the mix like the box says — boring. YUM! I would like a slice with coffee this morning! LOL! I love me some Jiffy corn bread mix. Years ago my dad ate dinner with me one Sunday and I had made a pan of jiffy corn bread. LOL, Jenna, I can keep a secret! I make my own but when I was young I did like using Jiffy because it was quick. I have to say I do like how you’ve doctored this up. I sometimes add corn and jalapeños when I make chili. Looks yummm! I’m still thinking about you and Ricki Jill and how much I enjoyed lunching with you both.
I’m hoping my son doesn’t read this post, he loves to make cornbread and does it the old fashioned way with an iron skillet, but I just don’t like it 😝 I hope we can lunch again soon!
I love cornbread, but glad to see a new recipe. We do the same thing, well sort of, we “doctor” the mix, with well, whatever the heck we want!

I’m a northern girl who likes cornbread, but my mom would add a little sugar and would call it Johnny cake. Thanks for the tip on how to make regular milk into buttermilk. Will pin, sounds good to me😉.
I think that’s why I like the Jiffy Mix, it has a little sweetness to it. Thanks Cyndi, that’s a good tip to remember if making it from scratch!
