Recipe Box, Lemon Sugar Biscuit Bubbles

I made these for the boys for a St. Patrick’s Day breakfast treat, but they could be iced and decorated to represent any special occasion or holiday

These little pillows of lemony heaven will definitely brighten your day!

You can make a lot or a little~

I used a mini can of biscuit dough {5 biscuits}

If you want to use Grands biscuits, they will be slightly bigger

or you can cut them into 6ths

Mix sugar and fresh lemon zest in a large ziplock bag or bowl and add dough pieces

Coat the biscuit pieces well and put them in a greased dish

Distribute any remaining lemon sugar over dough

Pour melted butter over all

Bake for 15 minutes and check doneness

I assembled mine the night before I baked them

so they were cold when they went into the oven

mine took 25 minutes

Ahhhh….

You can serve them just like this

Or with Butter Lemon Icing

Or with icing AND sprinkles!

They’re sorta soft

sorta crunchy

sugary buttery lemony good!

Lemon Sugar Biscuit Bubbles

Ingredients

Biscuits

  • 1 can 8, Grands biscuits
  • zest from 2 lemons
  • 1/2 cup sugar
  • 1/4 cup butter

Lemon Butter Icing

  • 1 cup powdered sugar
  • 1 T butter melted
  • 2 T fresh lemon juice
  • food coloring {optional}
  • sprinkles {optional}

Instructions

  • Cut biscuits into 1/4s. Combine zest and sugar in a large plastic bag. Add biscuit pieces and toss to coat. Place biscuit pieces into a greased baking dish. Drizzle with melted butter. Bake at 350 degrees for 15 minutes and check. Continue baking for 5 more minutes or until golden and cooked through. Let cool slightly then drizzle with icing and top with sprinkles.
  • *to make icing, melt butter and stir in lemon juice and sugar. If icing seems too thin, add more sugar, if too thick add more lemon juice.

Notes

{if you want a smaller batch, use the 5 count can biscuits and reduce recipe ingredients by a little less than half}
