Take-out Tuesday, Loaded Thai Salad with Orange Peanut Dressing

This is a “semi-homemade” salad made with the help of Chick-Fil-A and Trader Joe’s
Quick, Easy and Satisfying
A prepared cabbage and carrot slaw mix and fresh spinach are the base
The salad is topped with cucumber slices, pineapple,
green onions, cashews, chicken nuggets
Vegetable pouches are tucked on the side
for a different kind of crunch factor instead of croutons
This only takes minutes to make,
a few chops and slices
while the chicken and vegetable pouches heat in the oven
The dressing is quick and easy too,
and the trick is to use your microwave to soften the peanut butter
so it will mix well with the other ingredients
Orange juice, or juice from a fresh orange adds burst of freshness
This is a very tasty combo even without the chicken
Cut the nuggets in half before topping the salad for easier eating
The vegetable pouches are a little treat on the side…
No Trader Joe’s? No Problem
Look at your grocery store’s frozen section,
PF Chang’s mini egg rolls would be a great little extra too…
there are so many really good frozen bites available now,
Shake things up with something unexpected!

Loaded Thai Salad with Orange Peanut Dressing
Ingredients
For each Salad
- 2 cups cabbage slaw mix
- 1 cup fresh spinach leaves torn
- 1/2 ā 1 cup pineapple chunks
- 6-8 English cucumber slices cut in half
- 1 green onion chopped
- 1/4-1/2 cup cashews
- cooked chicken nuggets cut in half, or grilled or rotisserie chicken cut into pieces
- baked vegetable pouches or mini egg rolls baked
Orange Peanut Dressing
- 2 T soy sauce
- 1-2 cloves garlic minced
- 1 T rice vinegar
- 1 T sesame oil
- 4 T peanut butter
- 2-4 T orange juice
- sprinkle of red pepper flakes for heat if desired
Instructions
- Combine soy sauce, garlic, rice vinegar, sesame oil and peanut butter. Stir to combine. Microwave for 20 seconds and stir.Ā Repeat until peanut butter thins out a bit.Ā Add a splash of juice until desired consistency is reached.Ā Makes enough dressing for 2 salads.
- Put slaw and spinach leaves into a salad bowl.Ā Top with remaining ingredients and dressing

They are actually very good, we had them for a Christmas party and they were gobbled up!
Oh my gosh , does this ever sound very tasty. Love the crunch factor, which makes me eat slower, haha. We don’t have a Chick-fil-a, but I bet Sam’s club chicken nuggets would do or even a 10 piece chicken McNugget from McDonalds, right? I also like the idea of the little frozen eggs rolls cut up.

Semi-homemade has it’s place and this is one of them. I love Thai food and this is definitely something I might make — it’s been a long time since I have been able to get to Trader Joe’s. This will go on my list.

I like to buy the Asian Slaw from Dole at my grocery store. In fact, we ate it for dinner tonight! š It comes with almonds, wontons and a sesame dressing. I always add chicken or additional ingredients. Your ideas sound delish! I will have to look for the vegie pouches! š
