June is just around the corner,
Are you ready for a new season?
Things are already heating up in the South
so this month I want to make easy summer food
incorporating a ton of fresh fruits and vegetables,
but still family friendly
The flavor of the month is Ranch
psst, even if you’re not a fan of ranch salad dressing
Dry Ranch dressing mix is a wonderful way to add a little zip to just about anything,

The theme for the month was Muffin Tin
recipes made in individual portions to suit the many May holidays
Corn Pudding Muffins from Julie’s Creative Lifestyle are so moist and delicious so I call my version Julie’s Creamy Corn Muffins
HHjr made delicious individual Fajita Salad bowls that combined Black Bean & Cheese Enchilada Cups from Southern Living and Taco Salad Cups from Damn Delicious, and the Creamy Corn Muffins were a perfect compliment
Cheddar Bacon Ranch Pull Apart Rolls from Love Bakes Good Cakes are very addicting and dangerously easy to make, I call mine Ranch Monkey Muffins, and they are perfect for pot lucks and summer cookouts
Roasted Corn Salad Cups were inspired by Pepita Kale Salad in Parmesan Cups from Brit + Co, made with a delicious bag salad and roasted corn, they are not only easy to make but a real crowd pleaser, a unique party appetizer that people will rave about!

The leftover salad paired with BBQ pork made a fantastic BBQ Pork and Roasted Corn Salad Quesadilla!
Fruit Cheesecake Sugar Cookie Cups from Life, Love & Sugar turned into Lemon Berry Cheesecake Parfaits

As usual it’s hard to pick a favorite from these recipes,
I LOVED everything!

I love the idea of making a recipe bucket list! That zucchini slaw sounds so good…as do most of these recipes.
I have been doing this for years, it’s a lot of fun, and keeps me from getting lazy in the kitchen!
