Take-out Tuesday, Roasted Shallot and Everything Seasoning Dip

If you like Everything Bagel seasoning, and are a fan of onion dip, I hope you’ll try this twist on onion dip made with roasted shallots

This recipe is from Pattie @ Olla-Podrida
The base is fresh shallots
Shallots are similar to onions, but with a slightly milder flavor and a hint of garlic
Instead of sauteeing the shallots on the stove
I roasted the shallots in the oven without having to painstakingly peel each one
Once the shallots and onions are roasted
the skins will slide or peel right off
So easy!
Chopped parsley, chives and Everything Seasoning, plus sour cream are the base
Pattie uses Sherry vinegar but I forgot opted not to add it
Mix some of the parsley and green onions into the sour cream with the roasted shallots and garlic
Then top it generously with Everything Seasoning and more garnish
As the dip gets dipped into, the Everything Seasoning mixes down into the dip making each bite full of flavor
Serve with chips, crackers, vegetables, toasted pita or baguette slices, it’s great on just about anything!
I buy Everything Seasoning at Trader Joe’s but it’s super simple to make, see the recipe at the end of the post

ROASTED SHALLOT AND EVERYTHING SEASONING DIP
Ingredients
- 2 3- oz. pkgs. shallots about 6 large shallots, stem ends removed
- 3 cloves garlic ends cut off
- Olive oil
- Salt and pepper
- 2 tablespoons parsley finely chopped, divided
- 1/4 cup chopped green onion tops or chives divided
- Everything seasoning {Trader Joe’s or make your own}
- 1 pint sour cream
Instructions
- Preheat oven to 425°. Cut shallots in half. Place shallots and garlic on a parchment lined small baking sheet. Drizzle with olive oil and season well with salt and pepper. Bake 45 to 50 minutes or until shallots are light brown and skins are charred, stirring twice.
- Cool completely in pan on a wire rack (about 30 minutes). Remove and discard papery skins from shallots and garlic, and coarsely chop shallots and garlic. Mix into sour cream with half of the green onions and parsley. Top with everything seasoning and with remaining parsley and chives.
- Serve dip with chips, crackers, toasted pita or french bread, celery, cucumber slices, sweet peppers, anything!

I saw that dip on Pattie’s blog and thought it looked so tasty. I like your idea of roasting the shallows, Jenna. I just did that with a garlic bulb the other day. I got a free bottle of the Everything spice at World Market, and love it.
