Recipe Box, Easy Slo Cook Cranberry Sauce and Recipes using Cranberries

When I saw this Slow Cooker Cranberry Sauce over at Lynn’s

Happier than a Pig in Mud

I couldn’t wait to try it

I had all the ingredients on hand

Into the crock pot they went

Along with a few tired clementines

This is how it looked after 1 hour

and after 3 hours

After stirring at 3 hours, leave the crock pot lid off and let it cook for another 30 minutes

It will significantly reduce down to a lovely thick sauce

All done!

This batch won’t make it to Thanksgiving…

I have plans to use it in a fabulous recipe coming up soon!

Easy Slo Cook Cranberry Sauce

  • Servings: 1 cup
  • Difficulty: very easy
  • Print

12 oz fresh cranberries

2/3 cup sugar

3 clementines, peeled and sectioned

2 bay leaves

1/2 tsp ground cinnamon

Place everything in a 4 quart slow cooker.  Cover and cook on high 1 hour.  Stir, cover and continue to cook for 2 more hours, stirring every hour.  After 3 hours, stir and then leave the pot uncovered and cook 30 more minutes.  Cool.  Transfer to a jar and refrigerate for up to 2 weeks.  Yields about 1 cup.  Double recipe for a pint.

In the meantime,

here are some favorite holiday recipes using cranberries

Last year I made a similar cranberry sauce,

Cranberry Orange Sauce with Maple

It was fantastic paired with bacon wrapped Brussels sprouts for a festive appetizer

Bacon Wrapped Brussels Sprouts with Cranberry Orange Glaze

It is also wonderful on a flatbread

like this Holiday Cranberry Flatbread made with Thanksgiving leftovers

Cranberry Walnut Spirals with Gorgonzola Butter sound fancy

but they’re actually easy to make

These will definitely get gobbled!

White Cheddar Cranberry Fondue can be made and served

straight from a mini crock pot

And for dessert…

White Chocolate Cranberry Ice Cream

‘Tis the season for all things cranberry!
