Take-out Tuesday, Peach Mini Muffins with Almond Glaze

 

Here’s a perfect summer breakfast bite

 

 

 

 

Little muffins full of fresh peaches and topped with a sweet almond glaze

 

 

 

 

Fresh summer peaches are a favorite treat around here

 

 

 

 

 

Perfect for little fingers and fishermen alike!

 

 

 

 

They are topped with a cinnamon sugar butter crumb topping before baking

 

 

 

 

Combine cold butter pieces with the cinnamon, flour and sugar

mashing together with 2 forks or a pastry blender

 

 

 

 

Cream butter with sugars

 

 

 

 

Toss peaches with a little flour

 

 

 

 

 

Finish batter by adding eggs and vanilla to creamed butter

Add the dry ingredients 1/3 at a time,

alternating with sour cream

Then fold in the peaches

 

 

 

 

Scoop* batter into prepared pans**

 

 

 

 

Top with crumb topping

 

 

 

Bake for 18-20 minutes

 

 

 

Spread softened butter on hot muffin tops {optional}

Let muffins cool in pans on a rack and make glaze

 

 

 

Transfer cool muffins to a plate or platter and drizzle with glaze

Peach Mini Muffins with Almond Glaze

Peach Muffins

3 cups plus 2 tablespoons all-purpose flour, divided

1 tablespoon baking powder

1/2 teaspoon ground cinnamon

3/4 teaspoon salt

6 tablespoons unsalted butter, at room temperature

1 cup granulated sugar

1/3 cup light brown sugar, packed

2 large eggs, at room temperature

2 teaspoons pure vanilla extract

1 cup full-fat sour cream

2 large ripe peaches

4 Tablespoons butter, softened

Crumb Topping

1/4 cup granulated sugar

1/3 cup all-purpose flour (not packed)

1/4 teaspoon ground cinnamon

3 tablespoons unsalted butter, chilled and cut into tiny pieces

Almond Glaze*

1/3 cup powdered sugar

1 tsp almond emulsion

cream, milk or half and half, just enough to make the glaze the desired thickness

*substitute vanilla extract or lemon juice for a vanilla or lemon glaze

 

Make the crumb topping first, combining the ingredients with a fork or pastry blender until mixture resembles peas.  Refrigerate topping while preparing muffins.

In a large bowl, combine 3 cups flour with baking powder, cinnamon and salt.

Peel peaches and cut into small pieces.  Place in a bowl and toss with 2 Tablespoons flour.

Preheat oven to 350 degrees and line or spray mini muffin pans well with baking or cooking spray.  Silicone muffin pans are recommended.

In another bowl or in your stand mixer, cream butter with white and brown sugar and beat until well combined.  Add eggs and vanilla and beat well to combine.  Next add 1/3 flour mixture, then 1/2 sour cream.  Repeat, beating until just combined, ending with last 1/3 flour mixture, being careful not to overmix.

Fold peaches into batter.  Scoop batter into prepared pans.  Top with crumb topping.

Bake for 18-20 minutes, testing for doneness with a toothpick near end of baking time. Spread hot muffin tops with butter if desired.  Cool in pans on a rack.

Mix powdered sugar with almond emulsion {or vanilla extract or lemon juice} and just enough cream to form a thick glaze.

Turn muffins out onto a plate and drizzle with glaze.

Makes 24-30 mini muffins or 12 regular muffins.

    Good morning. Jenna! This post today came right on time. I am going into Ohio today to look for peaches! Up near Lake Erie there are lots of peach farms… I am hoping they are ready for me to find. If not… I’ll head to a winery instead. 😊

  3. You are so good to take step out pix. I always forget till I’m too greasy or floured up to do it! Half the time I forget to take the finished thing too, till it is half eaten! These look great. Our good peach season comes in August. You can bet I’ll be coming back to this one!
