Take-out Tuesday, Slow Cooker Chicken Casserole with Bacon & Tots

This recipe has been floating around the internet
and when HHjr came across it,
he knew it would be a great weeknight dinner

Easy, kid friendly and do ahead
means “winner winner chicken dinner” to both of us!

Boneless chicken
a bag of frozen tots, milk, cheese, cooked bacon
and seasoning, that’s it!

He used chicken tenders for a quick way to get even chunks,
but you can use boneless skinless thighs or breasts if you prefer

Place everything in the slow cooker, set it to high and go relax for 4 hours and dinner is ready!

Slow Cooker Chicken Casserole with Bacon & Tots
Equipment
- 6 quart slow cooker
Ingredients
- 32 ounce bag frozen tater tots
- 6 slices thick-cut bacon cooked, and cut into small pieces
- 1 1/2 lb chicken tenders or boneless skinless chicken breasts or thighs
- 3/4 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 2 cups shredded extra sharp cheddar cheese 2 cups = 8 oz cheese
- 2/3 cup milk
Instructions
- Coat the inside of your crock pot with non-stick cooking spray.
- Cut chicken into 1 inch cubes
- Dump half the frozen tater tots into the crock pot, and spread into an even layer.
- Place uncooked chicken on top of the tater tot layer. Sprinkle chicken with salt, pepper, garlic powder. Top chicken with 1/3 of the cheese and 1/2 bacon
- Spread remaining tater tots over the chicken layer. Top with remaining bacon and cheese. Pour milk over the top of the dish.
- Place slow cooker into the refrigerator for 6 hours or overnight
- Cover your crock pot and cook on HIGH on 4 hours*
