Recipe Box, Easy Sheet Pan Supper

Whew!

It has been a whirlwind holiday this year,

and if you’re like me, you are surrounded by boxes,

decorations to put away, and a general mess…

You might be tired of the kitchen, preparing food,

and generally exhausted from holiday fun…

BUT you still need to eat!

This sheet pan supper is an easy solution to “What’s for dinner?”

This is a very satisfying sandwich that is a meal in itself

Simple ingredients, easy prep

The vegetables and sausage roast together on a sheet pan

Drizzle the vegetables with olive oil, salt and pepper and roast in the oven

While sausage and vegetables are cooking,

simmer sauce with seasonings, or use homemade sauce

Cut the bread into 6 inch lengths,

and slice in half horizontally,

not quite all the way through, leaving one side attached

Spread butter on the inside of rolls

Sprinkle with garlic powder and a generous amount of Parmesan cheese

Place in toaster or broil until golden and cheese has melted,

and keep warm

Lay 3 links of sausage on each bread bottom

Top with onions and tomatoes

Cover with hot marinara and sprinkle with more cheese

Garnish with fresh basil if desired

Sheet Pan Sausage & Marinara Sandwiches

Everything cooks on a sheet pan for an easy and satisfying supper!

Ingredients
  

  • French bread or sturdy sandwich loaf style bread
  • 6 links breakfast sausage
  • 10-12 cherry tomatoes
  • 1/2 large onion sliced
  • 1 cup marinara
  • Italian seasoning
  • garlic powder
  • pinch of sugar
  • salt & pepper
  • butter
  • 4 oz Parmesan or Italian blend grated cheese.
  • Fresh basil for garnish optional

Instructions
 

  • Preheat oven to 400.
  • Line a baking sheet with parchment paper and place tomatoes 1/3 of pan.  Put onions on 1/3 of pan and put sausage links on remaining 1/3 of pan.
  • Drizzle tomatoes and onions with olive oil and season with salt and pepper. Place pan in oven at 400 for 8 minutes, turn sausage over, and continue to roast for 7 more minutes. Remove sausage and drain on paper towels. Return vegetables to oven for 5 more minutes or until tomatoes burst.
  • While vegetables and sausage are cooking, put marinara in a sauce pan and heat. Season with salt, pepper, sugar, garlic powder and Italian seasoning. Simmer sauce for 20 minutes to blend flavors.
  • Cut bread into 6 inch lengths, and cut in half leaving roll attached at one side. Spread inside of rolls with butter and sprinkle with garlic powder, and a generous amount of Parmesan cheese.  Toast or broil until bread is toasted. Place 3 links inside each roll. Top each roll with roasted tomatoes and onions. Cover with sauce and sprinkle more cheese on top. Makes 2 sandwiches
  • Serve immediately

Double or Triple recipe for more servings or bigger sandwiches
