Happy St. Patrick’s Day! ☘️

We celebrated CC’s St. Patrick’s Day birthday last Saturday

She had a party at an art studio with her friends Saturday morning

The studio is such a fun place, the owner is over the top creative

and the decor is crazy fun

There’s a huge room with painting tables for the children

And a party room for refreshments

The party theme was bunnies

There is art and creativity everywhere!

Later we continued the celebration with a family party on our patio

It was a delightful 80 degrees that day

I set up a little St. Pat’s birthday table with a St. Pat’s birthday tree

The tree is decorated with sparkling shamrocks and ice cream cones

The wooden cake puzzle is a family birthday tradition

dating back to when my children were babies

There’s a Spring gnome and a cupcake tower

And presents!

The temps only went down to the low 70s as darkness fell

CC had requested pizza made by her uncle, HHjr

He made a cheese pizza, a Canadian bacon and pineapple pizza,

a pizza with sausage, mushrooms and sweet peppers

AND

a pizza with spinach, apples & smoked Gouda

It was topped with a Parmigiano Reggiano Balsamic Glaze

{from our regular grocery store, but if you can’t find this,

use any balsamic glaze and sprinkle shredded Parmesan

or Parmigiano Reggiano on top}

It was swoon worthy!

Spinach, Apple & Smoked Gouda Pizza with Parmigiano Reggiano Balsamic Glaze

This is a unique flavor combo that makes a great light pizza, or add meat of choice to make it heartier. See notes and options at the end of the recipe
Prep Time 10 minutes
Course Appetizer, Main Course
Cuisine American, Italian

Ingredients
  

  • 1 pizza crust*
  • 1 apple, sliced
  • 2 cups baby spinach leaves
  • 4-6 slices smoked Gouda
  • 3/4 cup Alfredo sauce
  • 3 oz bleu cheese crumbles optional
  • Parmigiano Reggiano Balsamic Glaze**
  • shredded Parmesan for garnish optional

Instructions
 

  • Prepare pizza crust depending on how you will cook the pizza. If cooking on a grill roll out dough to form crust and transfer to a pizza peel. If using refrigerated dough or crescent roll dough and cooking the pizza in the oven, place dough on a parchment lined baking sheet, and cook in a 400 degree oven for 6-8 minutes until it begins to set up and start to turn golden.
  • Spread crust with Alfredo, leaving a 1/2" border.
  • Press spinach leaves into sauce and top with apple slices
  • Sprinkle with bleu cheese if desired
  • Top with smoked Gouda slices either whole of torn
  • Cook on hot grill on a pizza stone {time will depend on grill temperature} or bake in oven. If you have precooked your crust, return topped crust to 400 degree oven for 10-12 minutes.
  • Drizzle with Balsamic Parmesan glaze and cut into pieces to serve

Notes

*use raw pizza dough, refrigerated pizza dough in a can, crescent rolls or sheet, or prepared crust like Boboli
Cooking time will depend on method, pizza oven, grill, or oven
**You can use any balsamic glaze you like and add your own shredded Parmesan if desired.
Variations
Substitute pear slices for apple if desired
Add prosciutto, ham, cooked bacon or sausage, or cooked chicken for a heartier pizza

    • Thank you Ann, ha, we do love an excuse for a party. We planned to have a family dinner tonight but will probably have to cancel it, we are under a severe weather warning {tornadoes} all day and night and schools are closing at 1pm…the downside of Spring in the South!

    • She was so excited and so cute. This art studio is such a fun place, she has been there several times for art camp, and the owner also does lessons and private parties. I am worried about the weather today, you be safe too…

  7. I knew you would be surrounded by lots of shamrocks and leprechauns! So glad your grandchild got to have some friend time. I’ve never heard of Parmesan glaze before, so I’ll have to be on the lookout!

    • Aw, thank you! The art studio where her party was is THE coolest place, the woman who owns it does art camps and lessons, and CC always comes home with the most creative art!

    That pizza does look swoon-worthy! It reminds me of a pizza my son and I made last year when we took a cob oven cooking class. We made our own crust, topped it with sharp cheddar cheese, Asian pear and a very similar balsamic glaze. That balsamic glaze was just fantastic paired with the crust and cheese and sweetness of the fruit.

    Such a fun way for CC to celebrate her birthday. She is so cute in her little blue top and ruffled skirt and balloons. Love how you decorated with St. Patrick’s Day green on the patio. That pizza sounds delicious! So happy you were able to celebrate with her……….
