Recipe Box, Rainbow Salad

One of the recipes on my Paint Bucket list this month is
Rainbow Noodle Salad with Almond Ginger Dressing
I think the reason it caught my eye is
that I have made a similar salad and loved it!
The dressing is made with Almond Butter
and you will be whipping this up often!
There’s an old adage “You eat with your eyes first”
and this salad full of a rainbow of colors is instantly pleasing
It is a great way to lighten up your menu
and eat a variety of healthy vegetables, berries and nuts

The salad base is coleslaw mix and fresh spinach
topped with baby carrots, sliced cucumber, chopped sweet peppers,
blueberries, dried cranberries and almonds

You can add grilled or rotisserie chicken to make it heartier if desired
The dressing is made with things you probably have in your pantry
Almond butter, honey, soy sauce {or tamari}
garlic, canola oil, ginger, lemon juice, salt & pepper
Top the salad with Sliced Almonds for a flavorful garnish

That dressing sounds really exciting…creamy, nutty and so versatile. Love your cute pineapple wood bowl.
Thanks Angie!
This does look and sounds really good! I’m going to pin this one and share it with my daughter who’s having a hard time consuming fruits and veggies in an appealing way for baby! Thanks!
Uh oh, poor thing, I hope her appetite gets better with time…I’m so excited for you!
Colorful and healthy too Jenna! Checking to see to make sure you’re OK after the tornadoes and storms rolling through Alabama overnight. Hope you’re safe and damage free. ♥
Thank you Mary, scary day but we were lucky, the damage was north of metro Birmingham, and further south in Selma and Clanton. Schools and businesses closed at noon, so most people were home.
Jenna, beautiful and colorful salad! I hope you didn’t have any damage last night. It was a long day and night. The storm passed us around 11 PM. Prayers for all those who lost their homes and for those who will be facing the storms today!
Yes, rough day! We didn’t even have a power flicker, the storms were north and south of us…glad you’re ok and yes prayers for all…
So healthy and delicious!
Thanks Martha, it’s a favorite!
