Take-out Tuesday, Grilled Cabbage Steaks with Warm Bacon Vinaigrette

Now that temps are warming up,
here’s a different and delicious recipe to try on your grill
{I’ll show you how to bake it in your oven too}

Cabbage is cut into thick slices and grilled
then topped with a warm bacon vinaigrette

We had this as a side with BBQ chicken
You could serve it as a main course too, with a slice of garlic bread

Prepare the vinaigrette by first cooking chopped bacon
Remove bacon from skillet and drain

Combine the rendered fat in the skillet with sherry vinegar, mustard, shallot

Add bacon pieces back to skillet and stir
Keep dressing warm while cabbage is cooking
Cut base off cabbage and cut the middle of cabbage into 4 1″ slices,
reserving the smaller top of cabbage for another use

Brush both sides of slices with olive oil and season with salt & pepper
Place cabbage steaks on a preheated grill,
about 450 degrees, for 5 minutes per side
Or roast at 400 degrees on a parchment lined baking sheet
for 25-30 minutes

Place cabbage steaks on plates and pour warm bacon vinaigrette over the top

Grilled Cabbage Steaks with Warm Bacon Vinaigrette
Ingredients
- 1 large green cabbage
- 4-6 slices thick cut bacon
- 1 shallot, diced
- 1 Tbsp whole grain mustard
- 2 Tbsp sherry vinegar
- 1 tsp minced garlic
- salt and pepper
- olive oil
Instructions
- Slice off stem end and top of cabbage and cut the remaining fat middle section into 4 thick slices about 1 inch thick
- Brush both sides of cabbage with olive oil and season with salt and pepper
- Cut bacon into small pieces and fry in skillet until crisp, stirring occasionally. Remove to paper towels to drain
- Add sherry, mustard, garlic and shallot to skillet with rendered bacon fat. Stir and let simmer for 5 minutes. Taste, add salt and pepper and a dash of olive oil if you think it needs more oil.
- Add bacon pieces back to dressing and keep warm until ready to serve
- Grill* cabbage slices on a grill that has been preheated to about 450 degrees and cook for 5 minutes on each slde.
- Serve immediately and top with bacon vinaigrette

I would eat literally anything with BACON :-)) Love the grilled marks on the cabbage steak..this has me long for summer. We had some snow yesterday and this morning….unbelievable! Snow in April..

Try-try again. You make it look easy. I attempted something similar and the cabbage fell apart while grilling. Your yummy looking bacon topping may lure me back to try again. It really does look wonderful! I think the secret is how you sliced it so thick. Smart lady!
Well, mine sort of fell apart too, but cutting it in pretty thick slices does help, and you can roast it in the oven with no fall apart worries!
