Take-out Tuesday, Turning Leftovers into a Wow Meal!

I am a huge fan of the “cook once, eat twice” philosophy

It’s always nice to have leftovers on hand,

and with chicken there are so many possibilites…

chicken salad, chicken casseroles, chicken soup…

But if you want to change it into something different and exciting

you have to think outside the box a little…

The other night we had Honey Mustard Chicken with Mushrooms

and there was some chicken leftover…

How perfect for making Alice Springs Chicken Quesadillas

or kicked up grilled cheese sandwiches!

Alice Springs Chicken is a very popular dish at Outback Steakhouse

an American restaurant chain

It is a grilled chicken breast topped

with sauteed mushrooms, bacon, cheese and honey mustard

Sounds like a yummy combo so …

I took these ingredients and put them between 2 flour tortillas

and browned the filled tortillas in a skillet

First spread your tortillas with honey mustard

I used Honeycup Mustard, a jarred tangy sweet mustard

it is widely available in grocery stores

or on Amazon here

Next add diced cooked chicken

Top with sauteed mushrooms

Then I added some chopped green onions for flavor and color

Next some crispy bacon pieces

Top with 2 kinds of cheese, I used Sharp Cheddar and Fontina

And finally, drizzle the top generously with honey mustard,

you can make your own

with a combo of mustard, mayonnaise and honey

or use a favorite bottled sauce like

Ken’s Steakhouse Honey Mustard Salad Dressing

Now top it with another tortilla

At this point you can wrap them and put them in the refrigerator

for up to 36 hours, if desired

Cook quesadillas in a skillet with a little butter and olive oil,

over medium low-medium heat,

until tortillas are crisp and golden

and filling is heated through

Remove quesadillas to a cutting board to cut and serve

If you don’t have tortillas or don’t like tortillas,

use bread and make this like a grilled cheese sandwich!

Yum Jenna! We always have a rotisserie chicken in the fridge for salads and quick meals. Love the combo of ingredients in your quesadilla. Happy Tuesday ♥

I will have to make this for my grandkids. It has all the ingredients that they crave.

Great idea Jenna and so easy…they look scrumptious!

  4. Perfect Jenna! I think you can stuff just about anything in quesadilla as long as there is cheese glue!

  5. Quesadillas are like quiche, anything can go in, throw in some cheese and you have dinner.

  6. Amazing! I just bought and tried for the first time Almond Flour tortillas. They’re not so bad if you need to cut wheat or carbs. I guess with this recipe, you could use cardboard and it would be delicious! Thanks for another winner!

    • I’ve not seen Almond flour tortillas, but you’re right, with enough good stuff inside, the outside can be just about anything! I did love this ingredient combo…thanks Leslie Anne

This looks like a meal our family would love. You make it look so simple to make and I bet tastes delicious. Thanks for the this recipe Jenna.

  8. Jenna, yum these look delicious. I am always looking for something different to make with leftover chicken, and I think this is perfect. I haven’t eaten at Outback in years, I always enjoyed their Bloomin’ Onion.

    Happy Tuesday!

  9. Jenna, you are the mother of invention — or else you have had a long career studying interesting ways to upgrade things. That would be a terrific quesadilla!

  10. Yep, just got home from work, I’d love a quesadilla:@)

We never through anything away when I was a kid. My parents had survived the Great Depression. I was amused as a young bride with a Betty Crocker cookbook geared for two. She called left-overs “repurposed” meals. All I could do was shrug and laugh.

  12. The quesadillas are so perfect prepared and I could devour at least two at one go!

  13. Shannon@Belle Bleu Interiors says:

Jenna, I love making good use out of leftovers. Especially, with how high the price of groceries are becoming. These quesadillas look scrumptious! This is a perfect use for leftover chicken. Thanks for sharing! Happy Wednesday!

  14. I always have a problem “flipping” the quesadilla! I love using leftovers like this, too and your recipe sounds delish!
