Recipe Box, Summer Quesadilla

Quesadillas, tortillas filled with layers of ingredients,
don’t have to be Mexican or Tex-Mex
Think of tortillas as bread
and use them to make just about any kind of sandwich
They are wonderful for breakfast filled with scrambled eggs and cheese,
bacon or sausage
You can also cut them into wedges and serve them for appetizers
The filling can be just about anything~
like the Apple, Cranberry & Bacon Quesadilla
and the Peach & Prosciutto Quesadilla
pictured below

Quesadillas are an easy and different summer dinner idea,
and perfect for leftovers
It’s a great dinner for one, or make as many as you need

The other night I was wrapping up my stay at the beach
and made a tasty quesadilla for dinner with leftover corn,
a few spears of asparagus, a little pimiento cheese, grated cheese,
deli sandwich ham and flour tortillas

It was sooo good!

Saute the tortillas in a little olive oil and butter
until they are golden on both sides

Spread pimiento cheese or grated cheese over the tortilla
{or over half of the tortillas if you’re making multiple quesadillas}

Top cheese with a layer of corn,
this is great way to use leftover corn on the cob

Top with a layer of asparagus spears {or zucchini slices}
You can cook them crisp tender in the microwave for 2 minutes

Top with thin slices of ham
or chopped chicken, pulled pork or bacon

More cheese~ the cheese is the “glue” that will hold everything together

Top this yummy stack with another golden tortilla
and it’s ready for baking
or you can stash it in the refrigerator and bake it later

Bake the quesadilla on a baking sheet in the oven at 350 degrees
for 10-15 minutes until heated through and melted

Cut into triangles to serve

If you want to make it really cheesy, top it with a little queso!

A quick and tasty dinner using your leftovers Jenna! I use the panini press for quesadillas to get them good and melty. Happy Thursday. ♥
Great idea Mary, I need to try that!
They look so good! I love everyday meal like this, Jenna.
thanks Angie!
A fabulous idea to use the tortilla in place of bread. This is a very creative post. Thanks, Jenna.
Thank you Bernadette, Happy weekend!
Sounds like a great use of leftovers! I like how tortillas stay fresh for a long time too:@)
Good point, they are handy to have around!
This looks so yummy! A few years ago, I found out I could not have gluten. So, I’m always using gluten free corn tortillas to make my sandwiches. I adore pimento cheese so I can’t wait to try this combination. Happy Thursday!
Thank you Shannon, and great idea to use the gluten free tortillas! I hope you have a wonderful weekend~
Jenna, your quesadilla looks heavenly and we would love it. Perfect for using leftovers, especially corn which is my favorite! Happy Thursday, stay in and stay cool!
Thank you Pam, I love corn too…and yes it’s way too hot!!
Nifty, recipes for summer or anytime!
Thank you, quick and easy!
I swear, Jenna, you could make DIRT taste good. Pinned, and thank you!
Thank you Rita, what a nice thing to say!
I love quesadillas but have never cooked them in the oven. Great idea to get it all heated up nicely. If quesadilla is on a restaurant menu as an appetizer, I sometimes order that as an entree. Then it is not too much food.
I like to order off the appetizer section too for that very same reason! Quesadillas are so easy to make and a great way to use up a little of this and a little of that 🙂
What a quick and yummy dinner! Thank you! I’m off to buy pimento cheese! Yum!
Happy Thursday!
Thanks Nancy, I hope you enjoy!
That looks just scrumptious!
Thanks Jeanie!
Oh yeah! My family would dive for these!
A simple, easy dinner!
These look incredibly delicious, but let me clarify something, there is no such thing as “optional“ queso. 😉
haha, yes go for the queso!
I too love quesadillas, Jenna! They sure make for an easy meal and your combo sounds wonderful.
Thank you Kitty, yes they make a great quick dinner!
Jenna, every recipe you post always looks so delicious that I want to run out right away and buy the ingredients and make it on the spot. We usually have a lot of those ingredients on hand but the queso sauce is new to me so I’ll have to have a look for it. Thanks for sharing – I’m pinning! Happy Monday to you!
Thank you Kim! Look for prepared queso in the dairy section near the cheese, sour cream etc. It’s handy to have on hand for snacks or serving Mexican food. Have a great week!
Oooh, these look so good! I’ll have to try and make me & my hubby some before the kids get back from vacay. Thanks for sharing on Crafty Creators!
