Recipe Box, Summer Quesadilla

Quesadillas, tortillas filled with layers of ingredients,

don’t have to be Mexican or Tex-Mex

Think of tortillas as bread

and use them to make just about any kind of sandwich

They are wonderful for breakfast filled with scrambled eggs and cheese,

bacon or sausage

You can also cut them into wedges and serve them for appetizers

The filling can be just about anything~

like the Apple, Cranberry & Bacon Quesadilla

and the Peach & Prosciutto Quesadilla

Quesadillas are an easy and different summer dinner idea,

and perfect for leftovers

It’s a great dinner for one, or make as many as you need

The other night I was wrapping up my stay at the beach

and made a tasty quesadilla for dinner with leftover corn,

a few spears of asparagus, a little pimiento cheese, grated cheese,

deli sandwich ham and flour tortillas

It was sooo good!

Saute the tortillas in a little olive oil and butter

until they are golden on both sides

Spread pimiento cheese or grated cheese over the tortilla

{or over half of the tortillas if you’re making multiple quesadillas}

Top cheese with a layer of corn,

this is great way to use leftover corn on the cob

Top with a layer of asparagus spears {or zucchini slices}

You can cook them crisp tender in the microwave for 2 minutes

Top with thin slices of ham

or chopped chicken, pulled pork or bacon

More cheese~ the cheese is the “glue” that will hold everything together

Top this yummy stack with another golden tortilla

and it’s ready for baking

or you can stash it in the refrigerator and bake it later

Bake the quesadilla on a baking sheet in the oven at 350 degrees

for 10-15 minutes until heated through and melted

Cut into triangles to serve

If you want to make it really cheesy, top it with a little queso!

Summer Quesadilla

Fill flour tortillas with layers of cheese, corn, asparagus, and ham and bake for an easy summer dinner or appetizer! Drizzle with a little queso for a finishing touch!

Cook Time 15 minutes

Ingredients
  

  • flour tortillas
  • grated cheeses and/or pimiento cheese
  • corn*
  • asparagus**
  • thinly sliced ham, or cooked bacon, chicken or pulled pork
  • queso, optional
  • olive oil
  • butter

Instructions
 

  • Saute tortillas with a little butter and olive oil on each side until golden. Drain on paper towels
  • Spread a layer of pimiento cheese or grated cheese on one side of half of the tortillas
  • Top cheese with an even layer of corn
  • Top corn with asparagus and then ham
  • Sprinkle ham with grated cheese and top with remaining tortillas
  • Refrigerate the quesadillas for baking later if desired
  • Bake on a sheet pan at 350 degrees for 10-15 minutes until quesadillas are heated through and cheese has melted
  • Cut into 1/4s to serve and drizzle with heated queso if desired

Notes

*you can use canned corn, frozen corn, or corn on the cob. 
If you want to cook corn on the cob quickly put it in the microwave unshucked or wrap in a towel if it’s shucked and cook on high for 4 minutes per ear
**break off tough ends of asparagus, rinse and wrap in a towel.  Microwave on high for 2 minutes, then unwrap immediately to prevent further cooking

You can even wrap the quesadillas in foil

and heat them on the grill!

    I love quesadillas but have never cooked them in the oven. Great idea to get it all heated up nicely. If quesadilla is on a restaurant menu as an appetizer, I sometimes order that as an entree. Then it is not too much food.

    • I like to order off the appetizer section too for that very same reason! Quesadillas are so easy to make and a great way to use up a little of this and a little of that 🙂

    • Thank you Kim! Look for prepared queso in the dairy section near the cheese, sour cream etc. It’s handy to have on hand for snacks or serving Mexican food. Have a great week!
