Take-out Tuesday, Chicken, Bacon, Ranch, Green Bean Bubble-up

We have been having a lot of dreary, rainy weather

which always make me want a warm and cozy

casserole for dinner

This casserole is a bubble-up,

it’s loaded with chicken, green beans, bacon and cheese

in a creamy ranch sauce with biscuit pieces

Hard to resist!

Combine the sour cream with the Cream of Chicken soup

and Ranch seasoning in a large mixing bowl

and then mix in chopped cooked chicken

Stir in cheese and bacon pieces, reserving some bacon for garnish

Partially cook green beans in the microwave,

drain and add to chicken mixture

Transfer mixture to a large shallow casserole

At this point dish can be covered and refrigerated

for baking later if desired

Let casserole sit out for 30 minutes before baking if it has been refrigerated

Cut biscuits into 1/4s and tuck pieces evenly down into the chicken mixture

Bake at 375 degrees for 25-30 minutes until biscuit are golden

and chicken is bubbling

Garish with reserved bacon pieces

A green salad is a lovely accompaniment

I made this one with fresh baby spinach, romaine,

raw broccoli and cranberries

Enjoy!

Chicken, Bacon, Ranch, Green Bean Bubble-up

Chicken is baked with green beans and bacon in a cheesy cream sauce with biscuit pieces for this comforting casserole

Ingredients
  

  • 1 lb boneless chicken* cooked and chopped, about 3 cups I used 6 chicken tenders
  • 1 can Cream of Chicken Soup
  • 1 cup sour cream
  • 1 1/2 Tbsp dry Ranch seasoning mix
  • 1 cup grated cheddar cheese I used Triple Cheddar Blend Creamy Melt
  • 2 cups cut green beans
  • 6 strips crispy bacon, divided
  • 1 small can 5 count, biscuits {regular size, not Grands}

Instructions
 

  • Combine soup with sour cream and Ranch seasoning in a large mixing bowl.
  • Add chicken, and cheese and 4 strips of bacon torn into small pieces
  • Partially cook green beans in the microwave, drain and stir into chicken mixture
  • Transfer mixture to a greased shallow baking dish
  • Dish can be covered and refrigerated at this point for baking later if desired
  • Let dish sit out for 30 minutes before baking if refrigerated
  • Cut biscuits into 1/4s and insert pieces evenly into chicken mixture
  • Bake at 375 degrees for 25-30 minutes until biscuits are golden and filling is beginning to bubble
  • Garnish with reserved bacon pieces
  • serves 4

Notes

*an easy way to cook boneless chicken is to put it in a sauce pan with enough chicken broth to cover.  Bring to a boil then cover pan and turn burner off.  Let chicken sit in the covered pan on the stove top for 30 minutes.  Remove from broth and chop or shred.  If chicken isn’t quite done, it will continue to cook when casserole is baked

    Would love to make this. Will any combination of cheddar work (don’t have easy melt here) and what is in the Ranch seasoning (we also do not get that here)? Thank you.

    • Hi Barb, sure any grated cheese will work. I used the already shredded easy melt to save a step, but grating your own cheese is always better. Do you have Ranch Salad dressing mix in a small packet, you can use that or just use salt, pepper and some garlic powder.
