Recipe Box, Mardi Gras Salad

This flavorful festive salad has all the colors of Mardi Gras
with purple, gold, and green ingredients

Romaine lettuce, baby spinach, green grapes,
cucumber slices and pistachio nuts,
golden yellow peppers and mandarin oranges,
purple cabbage and red onions

Beautiful colors and vibrant flavors!


You can assemble it in the morning,
then toss it with my favorite 2 minute
right before serving

Mardi Gras Salad
Ingredients
- romaine lettuce
- baby spinach
- green or red grapes
- cucumber slices
- mandarin oranges
- yellow bell pepper
- purple cabbage
- chopped red onion
- shelled pistachio nuts
Mustard Maple Vinaigrette
- 1/4 cup olive oil
- 1 tsp red vinegar
- 1 Tbsp real maple syrup
- 1 Tbsp Dijon mustard
- salt & pepper to taste
Instructions
- Adjust ingredient amounts for the number of servings needed
- Tear lettuce and spinach into smaller pieces and put into a salad bowl
- Wash, slice and halve grapes and add to salad
- Add cucumber slices, drained mandarin oranges and diced yellow pepper
- Cut cabbage into slices and then cut the slices into pieces and add to salad along with chopped red onion
- Add shelled pistachios and toss with Maple Mustard vinaigrette or preferred vinaigrette
- This salad can be assembled early in the day and refrigerated and then dressed right before serving
Mustard Maple Dressing
- Combine ingredients in a small jar and shake to blend
- Refrigerate leftover dressing*

Mardi Gras isn’t a big deal in the north but I think that salad could be a big deal any time of the year. The dressing sounds very good and it’s so cheery looking. Nice presentation (and great masks!)
Thanks Jeanie, Mardi Gras is especially big on the Gulf coast, the town where my beach house is decorates the light posts with Mardi Gras decor and has a parade. The salad is a nice combo of different flavors and the dressing is my go to dressing, it’s great on just about any salad~
