Peach & Nectarine Galette
I had planned to share a tomato galette with you today,
but when I made it, the recipe was an epic fail!
Don’t you hate it when that happens?
So let’s have something for dessert instead,
like this yummy Peach & Nectarine Galette from the archives

It looks so pretty and it’s a breeze to make!

6 ingredients, 10 minutes, and it’s ready to bake


You don’t even have to peel the peaches!

Slice the peaches and nectarines with the skin on
Toss them is a bowl with cinnamon and sugar

Put them in a pile on the center of a refrigerated dough round
Dot fruit with butter
Fold the dough up and over the edge,
making a pleat every few inches

Brush crust with a little egg wash and sprinkle with sugar

Bake at 425 for 20-25 minutes, until crispy and golden


Let cool for a few minutes

Serve it up!

Serve with vanilla ice cream on top if desired


Peach and Nectarine Galette
Ingredients
- 1 refrigerated pie dough crust
- 4 peaches sliced (keep the skin on)
- 1-2 nectarines
- 1/4 cup sugar
- 1 T cornstarch
- 1/2 tsp cinnamon
- 1 egg
- 2 T butter
- 1 T sugar
Instructions
- Slice and pit fruit, no need to peel. Mix cornstarch and sugar.
- Place fruit in a large bowl and toss with sugar/cornstarch mixture.
- Press or roll out pie dough into a 10-12 inch circle. Pile fruit into the center.
- Dot the fruit with butter.
- Fold up the sides of the dough, about 1 inch, pleating every few inches around the perimeter, forming the crostata. Create an egg wash by beating 1 egg, then brushing it on the pastry.
- Sprinkle the remaining 1 tablespoon of sugar over the dough.
- Bake at 425 for 15-20 minutes, or until dough is golden brown. Serves 6
