Recipe Box, Magic Pumpkin Muffins
These muffins are truly magic~
Not only are they moist and delicious,
they are made with only three ingredients!

Spice cake mix, pumpkin puree and butterscotch chips

Put the cake mix in a mixing bowl and add the can of pumpkin

Mix well {I used my electric mixer}

Once cake mix is thoroughly incorporated with the pumpkin,
stir in butterscotch chips

I used a Nordic Ware muffin pan that I sprayed with cooking oil
{a similar one is available at Walmart here}
If you want to use a regular muffin pan, use paper liners

Fill the muffin cups
I only had enough batter for 10 muffins

Bake at 350 degrees F for about 22 minutes

Place pan on a rack to cool for 20 minutes
then turn muffins out of the pan and let them continue to cool

Magic Pumpkin Muffins
Equipment
- 1 muffin pan
Ingredients
- 1 box Spice cake mix
- 1 can 15 oz., pumpkin
- 1 cup butterscotch chips
Instructions
- Combine dry cake mix with pumpkin in a large mixing bowl and mix until all the dry mix is incorporated with the pumpkin
- stir in butterscotch chips
- Spoon batter into a prepared muffin pan filling each muffin cup to the top
- Bake at 350 degrees F for 20-24 minutes or until done
- Let pan sit on a wire rack to cool for 20 minutes
- Turn muffins out of pan and let continue to cool on a wire rack
- Store covered at room temperature
