Chili for Snow Day!

We rarely get snow in Alabama,

and when we do,

it is often chaotic and troublesome~

and always a very big deal!

But Friday’s snow was predicted

and schools had announced closings 2 days before

We had time to get groceries and necessities,

and people were ready

We woke up to a winter wonderland!

No sitting on the patio this weekend!

Super Teen’s truck was wearing a snowsuit

It was predicted that we would get maybe an inch or so,

and then it would melt later in the day…

but we actually got about 5 inches

and there wasn’t much melting at all

Big E got busy building a snowman

Then he went sledding

Nobody went anywhere on Friday!

It was definitely time for comfort food,

how about a nice bowl of chili?

Loaded Pumpkin Slow Cooker Chili is so good,

you really don’t taste the pumpkin

It provides a velvety texture and a little sweetness

to offset the heat from the fire roasted tomatoes and chili beans

White Chicken & Corn Chili can be made in the Instant Pot or Slow Cooker

Julie’s Creamy Corn Muffins

are a perfect pairing with a bowl of chili

By mid day Saturday the roads were clear

but snow was still on the ground

We will need comfort food for a while!

    Chili is a perfect comfort foonfor snow! We are still under last week’s snow, plus this week’s. I sure hope ours melts soon. It feels like when we were shut in for covid. Lots of cooking and baking going on in this house too!

    I took a leftover spaghetti sauce, aimed it towards minestrone, and ended up with a very chili like dish. It was perfect on this cold day! Your snow was beautiful. In my part of OK we had some too, but not as much.

    Am smiling! Altho’ in my part of Australia we normally do not get any snow I remember my childhood days in Europe only too clearly – snow was on the ground half the year. BUT nothing stopped – we did everything we normally did which included a couple of kilometres walk to school. Don’t think those were ever closed even when there was a metre of snow on the ground 🙂 ! One just ‘stomped thru’ and had huge fun doing so!

    Chile and corn muffins sound perfect for a snow day and what great recipes! I’m sorry for all your snow there Jenna – and 5 inches in a short amount of time wreaks havoc no matter where you are (even in Calgary lol). It’s usually the ice that causes all the problems. I hope it melts soon for you and that you stay warm and cozy!!

  12. Chili is the perfect cold-day food, along with corn muffins! (And we have it all too often here!) I love seeingthe photos of snow in your world. That’s how I’d like it — pretty and there for a day or two — then gone!

    • Thanks Kitty! The snow was beautiful and the roads were clear the next day so it didn’t shut our city down like it does sometimes so we got to enjoy it without the problems!
