Slow Cooker Magic Potatoes

This recipe is

5 minute prep, 1 pot start to finish,

and will bring delicious slow cooker magic!

Simply cut your potatoes into pieces

{1/4s or 1/8s depending on size of potatoes}

no need to peel

Toss them in a cooking oil sprayed slow cooker

Top with butter, dry onion soup mix, and add water

Cover and go on your merry way~  💃

A lovely aroma will fill the air as they’re cooking

When they’re done, you can eat them just like this,

soft and buttery with brown edges and onion flavor

OR

you can add a little milk and sour cream

and give them a quick mash with an immersion blender

or hand mixer right there in the slow cooker

Mix lightly, keeping some lumps for interest and texture-

over-mixing can make them pasty

They turn golden in color from the brown butter,

red skins and onion soup mix

Garnish with fresh rosemary if desired

Slow Cooker Magic Potatoes

5 minute prep, and the slow cooker will provide you with buttery, flavorful potatoes that can be eaten as small bites, or mashed
Prep Time 5 minutes
Cook Time 7 hours

Equipment

  • slow cooker

Ingredients
  

  • 12-16 red potatoes, washed but not peeled
  • 3 T real unsalted butter
  • 3-4 T dry onion soup mix
  • 1/3 cup water
  • 1/4 -1/2 cup milk
  • 1/3 cup sour cream
  • salt and pepper to taste
  • chopped fresh rosemary, optional

Instructions
 

  • Cut potatoes into 1/4s or 1/8s depending on size of potatoes.
  • Place into a cooking oil sprayed slow cooker.
  • Add onion soup seasoning, salt, pepper, and butter. Pour in water.
  • Cover and cook on low for 7-8 hours or on high 3-4 hours.
  • Serve them as is or mash potatoes with an immersion blender
  • For mashed potatoes, add the sour cream and 1/4 cup milk. Blend lightly with an immersion blender or hand mixer. Add more milk if desired. Cover and heat for another 30 minutes
  • Taste and adjust seasonings. Makes 3-4 servings

    Hi Jenna, The slow cooker works magic indeed! I’m not a fan of the artificial flavor of dry onion soup mix but onboard with butter, sour cream and milk. 🙂 Happy Tuesday ♥

    These look wonderful! I don’t have red potatoes, but I have Dutch baby yellow potatoes, and I’m thinking that might work as well. This past week I tried your chicken comfort casserole and absolutely loved it!
