2 Irresistible Autumn Soups
When you think of the ultimate comfort food,
a bowl of hot soup has to come to mind…
Autumn Apple Cheddar Soup and French Onion Ravioli Soup
will kick off your Fall in a delicious way!
They are easy to make too
The Apple Cheddar Soup is made with apples, apple juice, potatoes,
onions, chicken broth and cheddar cheese
Saute the apples, onions and potatoes until the apples are soft,
about 8 minutes
Add broth and apple juice
Simmer for 10-12 minutes
Use an immersion blender and puree the soup
Add 1 1/2 cups of the cheese and stir until it melts
Season with salt and pepper to taste
Garnish with reserved cheese and crispy bacon
The French Onion Ravioli Soup is made completely in a slow cooker
Refrigerated ravioli is the secret to the ease of this soup,
it will cook right in the soup!
The onions are caramelized right in the slow cooker
in 3 hours
Then the liquids and seasonings are added
and the soup continues to cook for 3 more hours
Slide in the ravioli and cook for another 30 minutes

Autumn Apple Cheddar Soup
Ingredients
- 1 small onion chopped
- 1 T butter
- 1 T olive oil
- 2 medium apples peeled and chopped
- 1 medium potato peeled and chopped
- 3 cups low-sodium chicken broth
- 1 1/2 cups unsweetened apple juice
- Kosher salt and freshly ground pepper
- 2 cups shredded extra-sharp cheddar cheese divided
- Melt butter with olive oil in a skillet over medium high heat
- crispy bacon bits for garnish
Instructions
- Add the onion, apples and potato and cook, stirring frequently, until the apples are soft, about 8 minutes.
- Add the chicken broth, apple juice, salt,and pepper to taste. Bring to a simmer and cook until the potato is soft, 10 to 12 minutes.
- Puree soup with an immersion blender*
- Stir in 1 1/2 cups of cheese, reserving the rest for garnish
- When cheese is melted and soup is heated through, ladle into bowls and garnish with reserved cheese and bacon bits

Slow Cooker French Onion Ravioli Soup
Ingredients
- 3 large yellow onions peeled and sliced
- 4 T butter
- 2 T flour
- 3 healthy dashes garlic powder
- 1/4 tsp dry mustard
- 2 tsp sugar
- 4 c DOUBLE strength beef broth*
- 1 c sherry beer, or white wine
- 2 dashes Worcestershire
- dashes allspice white pepper
- 10 oz Giovanni Rana Cheese Ravioli
Instructions
- Spray cooker vessel with olive oil spray. Melt butter in slow cooker on high heat. Add onions and stir.
- Cover and cook on high 1 hour. Stir again and reduce heat to low.
- Stir again after another hour. Repeat, and cook for an additional hour. You will cook onions 3 hours total before adding liquids.
- Add flour, garlic, mustard and sugar and stir until onions are well coated and mixed.
- Add broth, wine, and Worcestershire. Season with allspice. Cover and cook on low for 3-4 more hours.
- Add ravioli 15-20 minutes before serving, gently pushing them down into the soup. Ladle soup into bowls with 3-4 raviolis.
