Recipe Box, Election Night Menu

Election Day is almost here!  Pop the champagne! In an effort to stay politically correct here, I have chosen dishes for election day that are All- American, and symbolic of politics in general, not just one of the parties. Please leave a comment at the end of this post and VOTE for the dish that catches your attention!

Here’s the Menu

RED, WHITE & BLUE SALAD

Red, Bacon, this represents the pork barrel projects and earmarks in Congressional spending.

White, Cauliflower represents the ears of our politicians, they SAY they are always listening…really?

Blue, Bleu Cheese, as in the Moon is made of Bleu Cheese, which makes about as much sense as some of the stuff they tell us!

RONALD REAGAN’S FAVORITE MAC & CHEESE

There has been so much talk about Ronald Reagan these past 4 years, both parties claiming and touting his accomplishments, that I thought it only fitting to include his recipe for an all American favorite, Macaroni & Cheese.

ALL AMERICAN BOURBON BURGERS with CARAMELIZED ONIONS
There is sausage  hidden in the burger, just like the politicos HIDE THE PORK when they try to pass a bill in Washington!  The caramelized onions represent  the SWEET PROMISES they make,  and the bourbon makes the whole thing easy to SWALLOW!

“OBOMNEY” COOKIES

I tried combining Michele Obama’s and Ann Romney’s favorite Chocolate Chip Cookie Recipes, thinking this would be a great demonstration on how our country could come together…UNFORTUNATELY, these cookies were a disaster! Oh NO! Hopefully not an omen of things ahead!  These cookies were an ooey gooey mess that refused to cooperate.  Sort of reminiscent of the last 4 years?

Yuck!

Here’s how to make some of this delicious politically correct food!

RED, WHITE & BLUE SALAD

Course Salad, Side Dish
Cuisine American

Ingredients
  

  • 1 med cauliflower separated into florets and very thinly sliced
  • fresh spinach leaves
  • 1/2 head lettuce torn into bite sized pieces
  • 4-6 strips bacon cooked and crumbled
  • 1 oz bleu cheese crumbled
  • fresh blueberries to taste
  • bleu cheese dressing or salad dressing of choice
  • S&P

Instructions
 

  • Have all ingredients very cold and crisp, right before serving add bacon and cheese and dress with mayo or salad dressing. Serves 6

Below is Ronald Reagan’s recipe which I have not tried.  I can vouch for my Macaroni & Cheese recipe, just click on the title to access.

RONALD REAGAN’S FAVORITE MAC & CHEESE

Course Side Dish
Cuisine American
Servings 6

Ingredients
  

  • 2 pounds macaroni
  • 1 tablespoon butter
  • 1 egg beaten
  • 1 teaspoon dry mustard
  • 1 teaspoon salt
  • 1 teaspoon Worcestershire sauce
  • 3 cups sharp cheddar cheese grated, reserving some for topping
  • 1 cup warm milk
  • Pinch paparika

Instructions
 

  • Boil macaroni in water until tender and drain thoroughly. Stir in butter and egg.
  • Mix mustard and salt with Worcestershire sauce and add to milk.
  • Add cheese, leaving enough to sprinkle on top.
  • Pour into buttered casserole; add milk and sprinkle with cheese.
  • Add paprika.
  • Bake at 350 degrees for about 45 minutes or until custard is set and top is crusty.

ALL AMERICAN BOURBON BURGER with CARAMELIZED ONIONS 

Course Cook out, Main Course
Cuisine American

Ingredients
  

  • 1/2 sweet onion per person sliced
  • 1/3 lb. ground chuck per person
  • 2 oz Italian or breakfast sausage per person
  • BBQ sauce [allow about 1/4 cup per serving]
  • Bourbon or whiskey [2 T per serving] Don’t worry the alcohol will burn off in cooking
  • S & P

Instructions
 

  • Mix ground beef with raw sausage and season to taste, making 2 sliders per serving. Make a small depression with your thumb in the center of the patty to ensure even cooking [this prevents the patty from puffing up in the middle]
  • Get the onions started by putting sliced onion into a skillet over medium low heat with a little butter and a drizzle of Olive oil.  Let this cook down until onions are caramelized, giving them an occasional stir, about 20-25 minutes

Make sauce by combining BBQ sauce and bourbon

I used Wild Turkey, it being November and all, and KC Masterpiece Original Barbeque Sauce

When the burgers are done, place them on toasted buns, top them with some sauce and caramelized onions and dig in!

OBOMNEY COOKIES
