I think I got pranked early for April Fool’s Day. I’m pretty sure it was the Leprechauns. I had a recipe on my bucket list for March called Pistachio Fudge. The basic recipe was white chocolate and nuts. I decided to tweak this into more of a cookie. It failed. TWICE. How can that be, I thought, not once but TWICE!
I did invite you to visit the Leprechaun Village with me one day in March, for a sip and a nosh while the Leprechauns weren’t there. It must have made them mad! It’s the only thing I can figure out…
This is the first attempt at Pistachio Fudge, which I was going to call Pistachio Cheesecake Shortbread Squares…
Pretty, but it had NO flavor! Zip, nada, none…I don’t know why, nuts, white chocolate, cream cheese, shortbread cookies…how can that not be tasty?
Version 2 was white chocolate, crescent roll dough, sweetened condensed milk and pistachios. Again, NO FLAVOR! my son-in-law NG ate them and said they were great, but that doesn’t count, he’ll eat anything sweet…It almost put me off baking sweets…Notice I said ALMOST…
The BAILEYS IRISH CREME CUPCAKES turned out fine! So what do you think, did the Leprechauns play an early April Fool’s joke on me?

Lite Muffaletta Salad turned into CHOPPED ITALIAN SALAD with CREAMY ORZO & ASPARAGUS PARMESAN

Zucchini Crisps turned into a lighter version, ROASTED TOMATO ZUCCHINI BOATS
MINI REUBENS & POTATO SOUP showed up for St. Patrick’s Day
and we celebrated the Irish again with ROSEMARY & MINT MARINATED LAMB CHOPS
We really enjoyed GRILLED CHICKEN SLIDERS with BACON JAM, BACON JAM is this month’s winner, favorite recipe of the month!
Let me know if you have any insight into my cookie failures…do you think it’s the white chocolate that is causing lack of flavor, or the leprechauns?

Remember that old Chiffon margarine commercial that said, “It’s not nice to fool Mother Nature!”? Well, I think the leprechauns don’t like it, either. They put a contract out on you, and this was a revenge hit! 🙂 But you redeemed yourself with the beautiful cupcakes, so it’s all good!
