Take out Tuesday, Easter leftovers?

Here are some ideas for your leftover Easter ham and asparagus! How about a delicious Ham, Mushroom & Spinach Manicotti
You can still have a fabulous and different meal with your leftovers so don’t resort to take-out yet! If you are tired of ham, just freeze it for a few months.
Don’t panic, I took this photo last summer, I freeze ham all the time, it’s great for breakfast too!
You can bake the biscuits and assemble them and freeze for a grab and go breakfast on the run…
Or make a casserole and freeze it for later. How about Ham & Asparagus Casserole with Egg Noodles
These ASPARAGUS SANDWICHES are great to make ahead and stick in the freezer, you can just pull out one or two and add a salad or some soup and have a delicious meal in minutes!
I’m sure you’ve seen this asparagus tart on Pinterest… I have made several versions, including Martha Stewart’s and found them a little dry, so my version uses light Alfredo sauce for some extra creaminess. It compliments the puff pastry and asparagus perfectly. HH and HHjr BOTH LOVED IT and TOLD ME! That never happens!
This wonderful dish is elegant enough for a party yet goes together in minutes
Only 4 ingredients! Puff pastry, Italian shredded Cheese, Light Alfredo sauce and fresh asparagus spears.
Place one sheet of puff pastry on a baking sheet and turn up the edges about 1/4 ” to form a rim. Top with about 1/2 of the sauce, sprinkle liberally with cheese and top with steamed asparagus. Don’t overcook the asparagus, just lay it in a skillet with about 1/4 cup water, cover and cook on high 3-4 minutes, until spears are bright green and crisp tender. Run under cold water to stop the cooking process, drain and pat dry. Lay on top of tart and repeat layers, covering with more sauce and cheese.
Bake at 400 about 25 minutes until crust is golden

Asparagus in a Cloud
Ingredients
- 1 bunch fresh asparagus about 30-40 spears
- 1 sheet puff pastry
- 1 small tub of light Alfredo sauce about 1 cup
- Shredded Italian blend cheese or grated fresh Parmesan
Instructions
- Lay puff pastry on baking sheet and fold edges up 1/4″ to form a rim.
- Top pastry with half of sauce and sprinkle with cheese.
- Place cooked asparagus on top of cheese, cover with remaining sauce and sprinkle with more cheese.
- Bake at 400 for about 25 minutes until pastry is golden. Cut into strips or squares. Makes 4 side dish servings or 8 appetizer servings.

Each and every one of these dishes looks scrumptious and not like leftovers at all. I also freeze ham and enjoy for a few months afterwards. I smiled at the date on the package, because it is my birthday. 😉 I will be trying this recipe. So yummy, only no leftovers this year! xo
