Recipe Box, Bleu Cheese Bruschetta with Apple & Bacon

Apple recipes abound these days! Caramel Apple this, apple pie that, and then I saw Apple Brie Bruschetta with Bacon, Honey and Pecans over at Rattlebridge Farm

I was in love~this was the first thing that appealed to me since having the stomach bug, a hideous experience~ Yes! Life was good again!

But, me of little patience, could not wait to shop for ingredients so, I made some itsy bitsy substitutions and came up with my own version

Bleu Cheese Bruschetta with Apple and Bacon, topped with some nuts and dried berries~

WWTD good.  You know, Will Wake The Dead good!  This apple, this day, sent the doctor away and I was cured!

I know, a little dramatic.  I was excited to feel well again.

This would make a super easy and impressive appetizer for the holidays~unpeeled green Granny Smiths with cranberries and slivered almonds would look beautiful~

The crisp sweet apple with the tangy bleu cheese and the smoky bacon just melts on your tongue and the crisp nuts and more sweetness from the berries make you wonder if this is dessert or breakfast or simply heaven on a piece of toast!

Here’s the recipe:

BLEU CHEESE BRUSCHETTA with APPLE, BACON, NUTS & BERRIES

Course Appetizer, Side Dish
Cuisine American, Italian

Ingredients
  

  • Apples such as Honeycrisp, Granny Smith
  • baguette
  • bacon cooked until just crisp
  • bleu cheese crumbled
  • walnuts or pecans
  • dried cranberries or raspberries*

Instructions
 

  • Slice the baguette into fairly thin slices~thick enough for strength to hold toppings but not too thick to eat.
  • Toast lightly. Sprinkle bleu cheese or gorgonzola crumbles over toasts. This will be the “glue” to hold toppings on.
  • Top with a layer of apple slices then a piece or two of bacon. Sprinkle with more cheese.
  • Put toasts under broiler just long enough to heat and melt cheese.
  • Remove from oven and immediately sprinkle with nuts and berries. The melty cheese will help hold them in place.

Adjust ingredients according to servings needed

*I used the mix pictured because it was on 2 for 1 special at the grocery one day and it sounded intriguing~ but I recommend making your own version, something about the prepacked ones just don’t taste quite right to me, but they are certainly fast and easy!

Obviously the variations are endless here, and I am sure the original inspiration recipe is delicious.  I love recipes like this that you can adjust to your personal tastebuds~
