These cookies are delicious plain and delicious topped with strawberry preserves.

Have you ever had the popular cheese ring with strawberry preserves in the center, well, this is just a different version of that wonderful sweet and savory combination

These would be great for all the upcoming sporting events too, make them into football shapes for Super Bowl.  Top them with orange marmalade if you’re a Broncos fan! You could always serve the preserves on the side for guests to spread as desired

But I like them for Valentine treats the best!

Hurry February!

Here’s the recipe:

PIMENTO CHEESE COOKIES with STRAWBERRY ICING  adapted from Southern Living

for a printable version click here

1 cup flour

1 cup prepared pimento cheese [I like Palmetto brand]

1/4 cup butter [1/2 stick]

1/2 cup chopped pecans

Strawberry preserves [optional]

Beat cheese, butter and flour to form dough.  Add pecans and mix to incorporate.  Form dough into a log, or two logs, wrap in saran and refrigerate.  Slice into 1/4″ rounds and bake on a silpat or parchment paper lined baking sheet at 350 for 10-12 minutes.  Dough can be rolled or patted out and cut into shapes.  For Valentine cookies, use a heart cookie cutter and “ice” with strawberry preserves when cool.  Makes about 2 dozen

Dough can be kept in refrigerator for several weeks

Thanks so much for your visit, I hope you are safe and warm!

I love your feather boa, your tree and all of your fireplace decor! I left up a lot of our “Frozen” decor for January, but the dining room got lots of red started for Valentines Day. The trouble with Valentine’s Day is that it come half way through the month so it is here before you know it and you just have to decorate early for it!
These cheese straws look and sound heavenly. I am sure I couldn’t stop eating them!

how cute your V’tine décor is. I love the tree on your hearth, and the boa is a great idea for the mantel. I love anything that has pimento cheese in it. I’m definitely going to be trying this recipe. Thank you for sharing this recipe. (footballs are a cute idea too). laurie

I love your Valentine’s decorations. And your idea of turning cheese straws into wafer cookies, topped with jam, is brilliant. You’re right–it’s perfect for the Super Bowl. Have a great weekend!

I like the idea of pimento cheese used in your cheese cookies as I grew up in the south and it was a favorite of mine.

I ♥ savory cookies, Jenna. Even better I like that the dough will last in the fridge for more than a day or two. Thanks for sharing the recipe.
    Have a great upcoming week.

Jenna, I had bookmarked this recipe when I saw it in Southern Living and then forgot about it! So easy and I love the strawberry preserves to accompany it like the cheese ring recipe. Thanks for the reminder, how easy and tasty too. Note to self: Buy a pink feather boa 🙂
