Take-out Tuesday, Whiskey Carrots

Happy April! Celebrate Spring this month with some Whiskey Carrots~ they are so simple, so tasty and perfect for your Easter dinner~ No foolin’!
These carrots get a little help from Jack Daniels
but the alcohol cooks off so you can serve them to all ages
whiskey, butter
brown sugar
and carrots combine to make a tasty glazed bite
that will have you licking your lips
and fingers for more
Curious Bunny highly recommends them!

Whiskey Carrots
Ingredients
- 1/2 stick unsalted butter cut in half
- 1 lb. carrots peeled and cut into 1-2 inch pieces
- 1/2 cup Jack Daniels or other bourbon
- 1/2 cup brown sugar
- salt and pepper
Instructions
- Melt half of the butter in a large deep skillet over high heat. Add half of the carrots and cook and stir about 1 minute until they start browning. Remove to a clean plate and repeat with remaining carrots.
- Pour the whiskey into the butter in the pan and let the whiskey cook for about 3 minutes or until slightly reduced.
- Lower heat to medium low and add remaining butter, stirring to melt. Stir in brown sugar, then add all the carrots. Cover and reduce heat to low.
- Cook carrots covered for 5 minutes. Uncover and season well with salt and pepper. Let carrots cook uncovered for 5 more minutes. Makes 3-4 servings
